I rarely ever craft anything at all, because I anticipate that I will either get the card in question eventually, or that it will become useless in the foreseeable future. I don't mind rotating cards, but they should be good in Wild as well. Also, I'm way too risk-averse. I'm mostly just hoarding dust and keep holding back. My collection is far from complete, and I miss a lot of important legendaries, but I sit on about 50k dust if I count in the superfluous golden copies. I intend to spend some more of it, but well... my latest experience with crafting did not go so well.
There was one case where I gave in to temptation and crafted a deck. It was during Boomsday. I wanted to play Token Druid, because my main deck Even Warlock was just not performing that well anymore. I crafted the second Wispering Woods, the second Ultimate Infestation, two Arcane Tyrant and two Branching Paths. I already knew that Tyrant and Woods would probably not be great in Wild, but I thought it's probably worth the months until rotation, and Paths and UI were very strong cards in Wild as well. Just a bit later, Giggling Inventor was nerfed, and Token Druid became an obscurity. And a month or so after that, the entire class was ruined for me, and it's by far the worst class in Wild now. It just feels terrible, when your deck gets brutally nerfed, and you get close to nothing for it in return. I guess in Wild some of the cards will be useful again someday, but for now, I just don't like playing the class anymore, and it really feels like a waste.
Aside from that, while they were not huge losses, it somewhat bothers me that I crafted cards like a second Twilight Drake or a second Brawl, because sure enough, just a few weeks later I eventually opened them after years of waiting. Not a big deal, but still... And while I don't regret them at all, it annoys me that I had to craft several commons from GvG like Crackle, Velen's Chosen, Darkbomb and Shielded Minibot, that I would probably get dozens of if I could still purchase the packs regularly. Just don't want to spend money on Wild when the mode gets so little support.
In hindsight, there are actually a few cards I regret not crafting. I could have effortlessly climbed ladder for over a year with Patches the Pirate, because just before rotation it got nerfed anyway. Same with Baku the Mooneater: Should have just crafted it and get the dust refund on top of a year of grinding gold. Also, I wish I had crafted Psychic Scream. It was one of the few cards I was always missing for control Priest, and the deck was always between decent and very good. Maybe I'll end up crafting it anyway, or as a single along with a Lightbomb for possible Reno Builds.
Non golden whizbang. I have all classes golden and felt instant regret the first game I played.
Another non-craft I regret! I wanted to craft a golden Whizbang, but forgot to do it before i started opening packs, and of course a non-golden Whizbang was among the cards i got. Then I kinda no longer wanted to craft a golden version.
Oh many but the ones that stand out to me were the two golden Stranglethorn Tigers and two golden Menagerie Warden the day Karazhan released. You see, back then I thought Beast Druid was gonna be a thing. How young and foolish I was!
Edit: accidently crafting a golden King Krush while looking to see how it looked in golden also ranks up there. DE´d shortly after, feelsbadman.
Oh, and the golden Finja... not my brightest moment.
Crafted 2 Doomerang the night before Leeching Poison nerf. Hurts especially hard since I had put it off for a while wondering if Kingsbane needed them.
Any card I crafted because I was tilted and thought this or that deck is OP, without double checking if I really like to play that particular deck.
However, not crafting cards knowing in the hindsight they made good Tier1 decks is also a big regret.
Another one is Prince Liam fore the level-up nerf, but i ended up reaching legend for the first time two days after with odd pala even though he never saw play in over 25 games. Anyways don't really regret him because without that I probably would have played another deck.

The 1st card I ever crafted was The Beast :-p. I was a total noob and thought it was crazy value. Still remember the deck I made for it, warrior deck, giving it extra attack and charge, worked out from time to time but.............
Off the top of my head right now, I crafted 2 Voodoo Doll. I ended up disenchanting both of them. Also Malfurion the Pestilent, I tried to make a spider/nerubian druid deck but it played so horrible. I don't play Druid whatsoever, so I disenchanted it also.

Not because I wasn't satisfied with the cards, but because I crafted them 2 months before Naxxramas became available for people who missed out on it at the time. I still had a good time with the cards in the Un'goro-Wild-Meta back then though, so I only half regret it. ^^

Missing lethal since June 2015.
I crafted Hakkar, the Soulflayer because I wanted to experiment with deck ideas that could be fun.
I've since discovered that it's not particularly great, but I don't regret it yet... YET!
For all I know, the new expansions might give some more options for deck building.

I recently recrafted Raza the Chained (dusted my old one after the nerf) for Wild Reno Dragon Priest.
Turned out the deck is preety inconsistent and honestly a bit boring to play.
Playing Hearthstone in German solely for Garrosh sounds. Sieg oder Tod!

I crafted a golden Varian Wrynn on the 1st day of it's release, and a Troggzor the Earthinator, lessons were learned for sure :-/
