Having fun on ladder is often misconstrued with playing a low winrate deck. For me personally, I still believe one can have fun with competitive decks. In any case, the question arises if you still have fun while not winning over 50% of the time?
If yes, I always liked Espionage or Pogo Rogue. As for other classes, Recruit Warrior, Quest Mage, Evolve Shaman and Discard Warlock are some fun decks.
But again, is fun necessarily a below-average-winrate deck, or can you find fun in competitive decks? If the latter favors you more, I think Even Paladin, Even Shaman and Miracle Rogue are very fun decks. Specifically Even Shaman, that has a perfect mixture of strong board control, as well as the occasional fun factor in Hagatha and Menacing Nimbus.

I'm having fun and being competitive with the deck in my signature. Discarding stuff and Soulwarden make things very interesting, and you can make it even spicier with some minor changes.
Edit: I don't know if it's superfun by average standards, but I enjoy it a lot.
I know Shaman is still under the radar at the moment, but I have had a lot of fun with the board control options with this deck I put together. it's not perfect, and doesn't require the legendaries, although Electra Stormsurge creates those closing combos to make it a deck that you can actually win with. I don't know, I have fun with it, check it out!
I play my quest palldin and it is very fun and even semi-competetive.
You have enough early game to survive and also strong finisher (Lynessa and zola/bankers). If you are facing a fatigue deck, you can even do horseman combo. I really reccomend this deck if you are looking for fun control deck.
a glinda deck can be quite fun. even without the portals and meta wagons as. you can even make an echo lock without glinda and just use your minions with innate echo.
it's much better to be able to cheap out big minions for cheap and echo them though. mountain and sea giants and hooked reavers are perfect.
you can even build it in an even lock deck as well. I was playing some the other night as I had a warlock quest and it was loads of fun and won most of the games as well.
I can build something and share with you if you're interested. (there was one on front page recently that had the great ideas of using omega agent and rant catcher in the deck, but it didn't have meat wagons in it. meat wagon is a great way of cheating stuff out even faster as it pulls the portal from your deck)
theres also a new cutlass deck that uses azalina. I uploaded a version of that last night so can share that with you as well if you want. I can send you decks via private message so as not to plaster them over your thread without permission.

And then I also run these: 2x Sap for delaying (especially in the early-game) 2x Shiv and Fan of Knives for the card draw 2x Cavern Shinyfinder to thin down the deck (typically go with Shadowblade and Spectral Cutlass for weapons, but I have no clue whether they're optimal) 1x Preparation to play Vanish + Pogo & Recruiter on the same turn...I only own 1 copy but could see including 2 if you wanted to run Sprint as well 2x Backstab to trigger Elven Minstrel and help with early game survival 2x Mimic Pod for greedy late-game draws 1x Vilespine Slayer for removal...though maybe Walk the Plank or Assassinate would be better to thin out the minions that Elven Minstrel can draw 1x Zola the Gorgon for flexible copying (e.g. Pogo, Recruiter, Elven Minstrel)
Despite what people say, Odd Paladin with prince Liam is actually a fun deck and has one of the highest winrates in ladder rn.
Just be sure to use Witch's Cauldron instead of Divine Favor. There are arguments for it being better, but even though it's really close, Cauldron way cooler and more interesting.

are you playing it with stormwind champ instead of cauldron? this is supposed to be the best version right now.
I have not played much standard in the past week or 2, but I still keep up with the meta.

I'm not as familiar with Rogue/don't have all the cards, but these seem like essentials for obvious reasons:

2x Lab Recruiter
2x Pogo-Hopper
2x Elven Minstrel
1x Zilliax
2x Vanish
Also seem essential but I don't own/haven't tried, respectively:
Sonya Shadowdancer and Valeera the Hollow
Spirit of the Shark for Pogo, Recruiter, and Elven Minstrel
And then I also run these:
