You also really dont need to give an explanation on why you think it will be impactful because your mind might change within the next 2 weeks when all cards are released. However, i'm starting a little early because i think its fun to see how others truly feel.

These picks are for Standard - N'Zoth will be quite good in Wild, particularly Midrange Paladin, but each of these five cards will have a big impact in the older format.
1 - C'thun - It won't define the meta in the Legendary ranks, but in the 5 and below ranks expect it to be a strong presence. At least 1 new archetype, maybe more.
2 - Spreading Madness - Patronlock here we come. 1 new archetype
3 - All the revealed Shaman minions. Midrange Shaman is a thing. Control Shaman might be also. 2 revitalized archetypes
4 - Call of the Wild. Mid range Hunter is dead. Long live Mid-range Hunter! 1 old archetype restored to glory.
5 - Mire Keeper. Ramp Druid is on the onramp. 1 old archetype restored.
6 - N'zoth's first mate. Tempo Warrior is a thing now. 1 new archetype.
PS. I have no idea if they will define the meta, and no one really knows this at this moment or can even make a safe assumption. The above cards are just my favourites so far, which makes more sense than one very vague and unfounded prediction. However, I also believe that they will be used a lot.
I used a point system to evalute your votes so far and generate a ranking by giving the first 5 points, the 2nd place 4 points all the way down to the 5th place, which still gets one point. Obviously, cards which are valued by many players have the edge over cards that just get voted, because it is someone's favourite. More about that at the end of the post.
Most of you need to adress and relate to the question more. I have the feeling some guys here just state the best individual cards. That's why th possibly best two cards N'Zoth and Master of Evolution don't take the first place. Of course, no one can perfectly predict how the cards will influence the meta finally, but I'll try to make a risky guess choosing from the cards released so far. Here is my list:
1. C'Thun - a risky pick, I know. This card could very well drop out of this top 5 as soon as we're 2 days into the new meta. It most certainly isn't the best card from this set, but I could see several classes getting new and viable decks around C'Thun, so I think that C'Thun will influence the meta the most. It remains to be seen, how viable those decks will be.
2. N'Zoth the Corruptor - I believe that there will be at least one tier 1 deck and several tier 1,5-2 decks revolving around him. He just has awesome finisher potential.
3. Master of Evolution - This card is just so, so good. He makes Midrange Shaman viable again on his own (ok, Thing from Below also helps).
4. Call of the Wild - this card will be played in every hunter deck, it will be a staple. I just ranked it this low, because I hope any Hunter deck besides Control Hunter won't get too popular again, thus resulting in seeing this card A LOT.
5. Herald Volazj - A close one between him, Thing from Below and Yogg-Saron. This is also a very risky pick, but I could see it panning out. If the remaining cards fit him just a bit better than the cards released so far, he will change the meta and especially how the Priest class is played.

8. Flamewaker - Tempo Mage comes in with enough
9. Tunnel Trogg - Assuming Shaman gets another damage spell, ideally one for 2 mana, or some more overload cards
10. Thing from Below - Hooray, a tier 2 Shaman deck that's not SMOrc
... but these aren't all WOG cards? Well yeah, but despite the hype WOG won't be that meta-defining. There's too many gimmicky Timmy cards.
