G'huun is not actually bad in Res Priest really. It isn't great, but for a deck with so much healing, the tempo that G'huun can offer is pretty nice. The card isn't fantastic but it's useful.
That's the issue with G'huun really. He's just a draw 2 and then a dump of tempo in turn so it can be a very strong play but the card isn't anything spectacular. The one deck that I can think reallistically wants to run G'huun is Highlander Priest. In that deck you just want a lot of good single cards, you want every single one of your 30 cards to be powerful on their own so G'huun maybe finds a way into said deck. The issue with that card is that it really doesn't do anything too specific or synergystic, it's a fine card but nothing game changing, specially on turn 8, cause even if you dump a bunch of stats in turn 8, your opponent has had a lot of turns to draw their AoE so yeah. It's one of those legendaries which you're ok if you open it, that it might eventually see play at some point but it's definitely not a build around legendary so it also could just end up catching dust in your collection forever tbh.
If you go to "view all decks" below the featured decks on the home page, filter for G'huun the Blood God you will find lots of cool standard decks with the card.
I'm using G'huun the Blood God in an Aggro Priest, with some Flesh Giant, Brittlebone Destroyer Synergy. Works great. I don't think you want to take too much damage from those 2 cards and it's a great reload to the board. Try this:
Kibler’s Corrupt Control Priest does well with the Blood God. I finished a few achievements thanks to it and had some fun along the way. If you’re seeing a lot of aggro rouge might want to add some 1 damage board clears or a wild pyro or something.
I know it's pretty late in the game to finish the quest, but I know when I see a priest slam that quest on turn 1 I usually try not to smack them until I've built up a good force to do so.
So being able to damage yourself might be a good combo for it.

I've just opened a pack and got G'huun the Blood God and I literally have no idea how to use it.
It won't be suitable for Res Priest as it has a battlecry effect and it would be lame to simply res a plain 8/8.
Any thoughts?
