Usually Blizzard tries to not buff popular archetypes with a new expansion, but I feel like Soul Demon Hunter and Paladin decks (and most of the Paladin decks are pretty incestuous, pure paladin/libram paladin/pen paladin run A LOT of the same cards) all got significant buffs.

You could literally play this with your eyes closed. Play a card, hope RNG is in your favor, win. Game is decided on turn 1 or 2 dependent upon what can only be described as an absolute crapshoot.
Is there some way to buff priest? I seem to play against priest 50% of the time and I'd like to get that up to at least 80%.
Don't think it would be too hard. Change the hero power.

I got Legend this month with Pirate Warrior. You appear to enjoy aggro, so try that.

To answer your second question, it's early in the month; encountering non-legend players is expected, if not common.
