I marked the that might be effected Legendaries with ** in the OP. This could be pretty massive! Even Prince Keleseth will be noticeably weaker because of the change to Saronite Chain Gang.
Spiritsinger Umbra - for Deathrattle Priest (in this case next in queue will be Awaken the Makers), Big Rogue, Big Warlock and other fun decks.
Da Undatakah - Taunt Druid (in this case next in queue will be Hadronox), Jade Deathrattle Rogue, Control Paladin, maybe even Reno Hunter?
Zul'jin - to complete Spell Hunter, but I am not sure how strong is it in Wild currently.
Did you try Feign Death hunter? I think it is pretty uncharted territory!
I don't think any of those will bring your winrates up too much except Zul'jin, but Da Undatakah is probably the most fun, and you will have him copy the DR of Sylvanas Windrunner from time to time...

Val'anyr is nice in handbuff, but not a must-have card. If you're under a lot of pressure, you may not have enough time to set it up. If you're not under pressure, you're probably up against a control deck that can silence or transform your minions. You can play around that by trying to make it land on a cloning minion, but with the nerf to Saronite Chain Gang there is one less option to clone it. And cloning still doesn't prevent cards like Vanish, Psychic Scream or Devolve from wiping out all copies. It is lots of fun though if you do manage to get Val'anyr cloned, so you could get it for meme value, but don't craft it if you expect it to significantly help your win rate.
Umbra is useful in combo decks, but in mid-range decks she is often too expensive to summon in the same turn as the minion you want to trigger, while being too fragile to survive into the next turn.
I've been playing Da Undatakah in several Standard decks and he works pretty well. Even relatively weak deathrattles like the one from Bone Drake are good enough since you get three of them. I haven't tried him in Wild yet, but it seems to me that most decks that run N'Zoth could benefit from running Da Undatakah as well. There are some really good deathrattles to copy in Wild, like Sylvanas (as SlydE suggested) or Sneed's Old Shredder.
In my opinion a lot of people are overreacting to Zul'jin. It is a good card, but not broken. Spell Hunter gets to use Cat Trick in Wild, but I think not much else, so I'd expect it to be weaker relative to other decks than it is in Standard. Maybe you could make a deck with minions and run Call of the Wild instead of To My Side! and still get value from Zul'jin. It would make him more consistent if you could run only beneficial spells instead of having your freshly summoned minions killed off by Kill Command.
Which cards do you think will benefit my overall collection more and which deck from your experience is more fun ?

I'm really enjoying Big-Spell Mage in Standard at the moment, and I'd like to continue to play it in Wild (at ranks 20-16) once the rotation happens in April. I know she'll rotate soon, but I'm thinking about crafting a golden Sindragosa. My Lich King, Alanna, and FLJ are already golden, so having Sindragosa golden as well would be pretty neat. Would the Standard BSM build (as shown in the most recent Vicious Syndicate report) do okay in Wild at ranks 20-16? I'd be playing just for fun and would be happy with a win some/lose some scenario.
Also, can someone confirm that golden Sindragosa's Frozen Champs will give me golden legendaries? I assume so but feel I should check before crafting anything.

It does. You don't need Sindragosa per se, so you don't have to waste dust on her. I'm having fun with Weaponized Pinata as an alternative.

I think its main force is not being able to play a card from your opponent's hand, but being able to know what the other player has.
Personally, despite it's not very good to top deck when you're in need of answers, it saved me many times, leading me to wait one more turn before making a certain play and avoid a Tarim or a Flamestrike

Hey guys I want to Craft a deck and I want your advice.
I’m thinking between Odd Warrior or Secret Hunter.
For Secret Hunter I’ll need the big legendaries Deathstalker Rexxar , Zul'jin and Subject 9.
For Odd Warrior I’ll need a couple of Shield Slam , a couple of Supercollider , a couple of Smolderthorn Lancer and a Ysera.
Which cards do you think will benefit my overall collection more and which deck from your experience is more fun ?

I’m missing kelseth, oondasta and shaw for big hunter. And i’m thinking of crafting the last two, but i’m not so sure if i should craft kelseth

For the fun and max value, yes, but he is very slow for the format and will not improve your winrate in any decks afaik.

It is a great card, but not essential enough for its one archetype, and will also rotate soon.
Edit: Rhok'delar seems more important now in the post-nerf meta. A return to tier 1 will be considered!
