If immunity did what you suggest that would mean Uther of the Ebon Blade hero power destroy hero effect wouldn't also work. Ice Block would also counter destroy your hero effects. And all immune minions wouldn't die from cards like Twisting Nether, Obsidian Statue deathrattle or Vaporize
yeah, same thing if ice block is up. You still lose. It's BS in a way, But yeah, same deal with Uther of the Ebon Blade too. Get 4 horsemen out and doesn't matter if you have ice block or time out, it's still game over man.

The interaction is consistent with other interactions currently in the game. In my Deathspeaker Geist Warlock when your Knife Juggler & Geist are immune on the board they can still be killed by things like Obsidian Statue if the effect targets either immune minion. "Immune" pretty much only means immune from damage, at least in terms of player-controlled immunity. Is it bad wording? Yes, but the interaction is correct.
The best counter for Mechathun I saw came when the opponent played OTK Quest Priest and completed his quest while playing his OTK turn, generating his 5-mana quest card to his hand, though if playing 2x Ticking Abominations the 0/3 would vanish too.

If the word "Immune" functioned like its dictionary meaning, then, yeah, you couldn't get blown up by Mecha'thun while protected by Time Out!. What is the meme from the Princess Bride?: "I don't think that word means what you think it means."?
"Immune" has several distinct qualities, which are not all intuitive. For instance, you can target your own Immune card, although your opponent can't - of course your card takes 0 damage if the effect deals damage. I don't think all the qualities are explained in the pop-up box that appears by cards. Since Immune doesn't occur a lot in the game, I sometimes struggle with it.

Mecha'thun is not dealing any damage to win so it's working the way it should work.

Mecha'thun and 4 horsemen will always destroy the opponent despite any immunity (Mal'Ganis, Ice Block, Time Out!). Same thing if you swing at Mecha'thun and kill it with Shadowblade or while having Violet Illusionist on the board.
