Becasue Quest Priest is pretty self explanatory i want to go over my card choices. Or better said; why i didn't pick certain cards.

First of all. When playing Quest Priest you really want to play on curve and therefor you want as much 2, 3 and 4 drops as possible. You still want a good amount of 5 and 6 drops because you want to draw them naturally too. You really dont want to draw your 7 and 8 drops turn one to six. They can be discovered through your Quest progression and with Gorloc Ravager (into Mutanus). Therefor you want as few as possible.

I think the cards which in are my list are also pretty self explanatory. So let's go over some of the notable cards which didn't make the list and why. Thsese cards are also the replacement options.

1 drops

All 1 drops basicly, except for Sir Finley, Sea Guide (he can fix your hand) and Holy Smite (your early game removal).

Because you ALLWAYS play your quest on turn one followed up by your 2, 3 and 4 drop on curve you don't want to play a 1 drop any of those turns. Any 1 drop is less room for a 2, 3 or 4 drop. Notable 1 drops which didn't make the list; Cleric of An'sheFlash Heal, Gift of the Naaru, Holy Smite, Shard of the Naaru, Mistress of Mixtures.

2 drops

Shadow Word: Death; Too slow for Quest progession.

Defias Leper; Not enough Shadow Spells in the list.

Other notable 2 drops are; Soothsayer's CaravanCondemn, Explosive Sheep*.

3 drops

Amulet of Undying*; Not enough early game Deathrattle Minions therefor Amulet on turn 3 is rarely useful.

Handmaiden; Not enough Spells in the list.

Copycat; Can (easily) be played around by opponent not giving you a useful Card.

Switcheroo; You really want Minions on board turns 2, 3 and 4 for trading.

Other notable 3 drops are; Acolyte of Pain, Hog Rancher, Lone Champion, Pandaren Importer, Rustrot Viper, Tar Creeper, Treasure Guard*, Vulpera Scoundrel, Devouring Ectoplasm*.

Many of the 3 drops in the list have a similar effect as a card which didn't make the list except for Rustrot Viper. The 3 drops which are in the list are mostly personal preferences.

4 drops

Lightmaw Netherdrake: Not enough spells in the list.

Xyrella: Not enough heal in the list.

Najak Hexxen*: Not enough Silence effects in the list.

Multicaster: Not enough (School) Spells in the list.

Void Flayer; Not enough Spells in the list.

Other notable 4 drops are; School Teacher, Blademaster Samuro, Baba Naga, Big Game Hunter.

5 drops

Shadow Hunter Vol'jin; I don't wanna give away a free Mr. Smite or Mothership.

Other notable 5 drops are; Taelan Fordring, Against All Odds.

6 drops

I didn't find any other 6 drops good enough / better than the 6 drops which are in the deck.

 Notable 6 drops are; Mothership*, Mossy Horror, Mr. Smite, Cairne Bloodhoof*, Undying Disciple*.

7 drops

Elekk Mount; Sometimes it is hard to stick a Minion to put it on.

Other notable 7 drops are; none

I only run ONE 7 drop (Mutanus) because ALL the other 7 drops i didn't find good enough. Mutanus can be easily found through the Quest, and with Finley or Gorloc Ravager.

8 drops

Murozond the Infinite; Sometimes it can be hard to get value out of Murozond.

Other notable 8 drops are; Goliath, Sneed's Masterpiece, Abominable Lieutenant, 

9+ drops

9+ drops do nother for the Quest Progression. Whirlpool is a personal preference and can be easily be replaced. Whirlppol is great versus Control Warrior and Ramp Druids though.

About replacements

Most cards in my list i found core to the list[. Only cards i would consider replacing are; Holy Smite, Whirlpool, Doomsayer, Tuskarrrr Trawler a 8 drop. I would ony replace them with more board control cards or more Deathrattle cards / package (cards with * behind their name in the writeup.

Two cards i really consider putting (back) in are; School Teacher and Rustrot Viper, but i don't know what to take out yet.

Edit

Other cards i would consider replacing after patch 23.2.2 are Gorloc Ravager and Sir Finley, Sea Guide.

Patch 23.2.2

Patch 23.2.2 improved the deck a lot. Whirlwind [/card] from 9 > 8 mana and [card]Blackwater Behemoth from 8 > 7 mana (yay an extra 7 drop for de deck). These changes gives the deck some more flexibility. Now Gorloc Ravager and/or Sir Finley, Sea Guide can be more easily be replaced by School Teacher / Taelan Fordring / Switcheroo.
