Freeze Mage hands down. Like nothing is even close to how boring playing against them are. Most uninteractive (from the opposing player side) match up by far. The only deck in the history of the game that if it dominated the meta, was everywhere, I would quit the game without a second thought.
Anything that requires zero brain cells to play, which mean decks that cant be beaten if they get the perfect starting hand, or if you dont draw the exact answer in time. The plays in these decks involve little to no decision making and most often just play on curve. That means:
Secret Paladin
"Mech" anything, like mech mage etc.
Any druid deck playing the combo, AKA combo druid, token druid, egg druid etc.
Dragon priest
Agro Shaman
Face hunter
Midrange hunter
All the above mentioned decks often get "free" wins, so in actuality, its not so much the decks that annoy me, its more so the players piloting them. I have little tolerance for people who goes for easy wins over challenging play. Sadly, that incorporates a large chunk of the community.

1st place hands down is Combo Druid,playing against them for me it's like playing against a clock... Tic toc tic toc time is running out... And on turn 9 you're dead...
2nd place goes to CW it was already boring before now with Justicar it's 10 times worse... They just sit behind 50 armor till they draw Alex and kill you next turn...
3rd place goes tothe mirror match,no matter what I'm playing I find mirrors awfully boring...
Priest in general, because having your board cleared almost every turn and getting your cards stolen isn't particularly the funniest aspect of the game...
Face Hunter. Not only is there no effort to making those decks, there is no variety, and our just facing the same goddamn carbon copy deck over and over and over again. Lack of variety equals lack of skill. Deal with it.
Aggro Shaman is the most annoying opponent for me.. because if they get the perfect draw, you're just dead before you can do anything about it.
I don't mind Freeze Mage. They're slow, so you almost always have time to draw the common tech cards that can defuse their win condition, (Loatheb, Antique Healbot/s).
I usually don't like playing against Control Priest, because of all their fuckery, but strong Combo decks beat em, which I've enjoyed playing recently, especially Malylock.
The only decks that I don't like at the moment are face aggro decks. There's really no fun to be had in those games for me. I like a challenge, and against face decks my plays are as auto pilot as theirs because the game rarely lasts long enough for any real decisions to be made. I don't mind playing against combo decks and gimmick decks, I like seeing them try to thread the needle as I try and screw up their plans. As far as control goes I love playing against control. The control matchups last a lot longer, but they are a lot more fun for me so the extra time is worth it.
I find Freeze Mages to be extremely tiresome. I'll think I've played around everything and then I'll forget about that last ice block or particular legendary. Very few times I've managed to win that matchup as a Control Priest about a year ago or as a Budget/Midrange Value Mage now. (Started a new account when I came back.) Secret Paladins can be frustrating but if you keep track of the secrets and play around them as best you can it usually isn't too much of a problem.

Any mirror match is just unplayable for me, no fun at all. That's why I rather avoid playing cancer decks.
