Elise Starseeker is fun, but mainly when both players have her so it becomes a legendary standoff.
Also, and I can't believe no one has mentioned it yet: Echo of Medivh! This card enables so many value scenarios its insane.
Yogg, of course, deserves a mention just because he exists.
And the three tri-class discover cards. I honestly have tried out all three of them in Reno decks for nearly every class, and I always like it when the gameplay changes completely just because I discovered a whacky win condition. Of course, other times its just some extra removal, or a wimpy minion, but still, its a good step towards combining a wide variety of unique outcomes with decision-making.

Tundra Rhino has become crazy fun as a combo starter with all the Hunter deathrattle minions or just handbuffs. Setting up a Rat Pack, or even just a Grandmother, and dropping a Hyena allows for some crazy interactions. Too bad Hunter is so bad right now. It's like a mini flash of old Warsong.
Demented Frostcaller if you've ever gotten a turn or two of freezes off. Probably while playing control Warrior from an Ironforge Portal. It's funny, yet pretty sweet.
Finja, the Flying Star probably not an "offbeat" one, but is just cool when it works. Can have a similar effect to Tundra Rhino's mentioned above if it pulls some Bluegills.
I also forgot about Varian Wrynn(i actually crafted him). I tried to make him work in so many decks

I love the Tri class discover cards as well. The Grimy Goon one has netted me some crazy cards in my buff Paladin deck. too bad that deck sucks.....
and Kabal Courier has given me Coldara Drake 4-5x in my Shadowpriest deck. so much fun :D
I really like cards with a unique animation, like Mimiron's Head (Voltron).
It's rare though, since if your opponent can't deal with it after you set it up, they usually concede and don't let the animation play FeelsBadMan
Dreadsteed is cool too.

I really like Medivh, the Guardian, he just makes any game more fun! By the same measure I also have a weakness for Summoning Stone

Elise Starseeker,Lord Jaraxxus, Duplicate, Echo of Medivh, Archmage Antonidas, Emperor Thaurissan, Shadowform, Malygos, Alexstrasza, Prophet Velen, Kazakus, Inkmaster Solia (because I have her in gold), Medivh, the Guardian, Ysera, Reno Jackson, Raza the Chained, etc.
Basically if a card makes for cool combos or value plays, I have a soft spot for it, especially if it does that in unique or unexpected ways.
Dreadsteed for me.
Nexus-Champion Saraad, Anub'arak and Burgle will forever be my favorites.
Because I love getting random cards from other classes and OH SO MANY NERUBIANS AHHH
Enhance-o-mechano in wild token decks is pretty fun too. He is a win more card, but still tons of fun
