You obviously don't have a 56% winrate at rank 11, if you're stuck there.
IMO if you want to improve your deck, you need to drop Nzoth and infested tauren, since your goal should be to win by turn 9. With that goal in mind, why include cards that maker it harder to achieve in order to play Nzoth?
I got to rank 11 with around 66% WR, the "stuck" changed the rate to 56% (now 53%).
Anyways, for a win on turn 9 and dropping -1 [card]N'Zoth, the Corruptor[/card] and -2 [card]Infested Tauren[/card], what should I use instead those 3 cards?
I don't think ram wrangler is consistent. IMO stranglethorn is more useful in more situations. Also, your list already has three five drops (2x rhino and kodo iirc)
+1 quickshot will help early game especially versus shaman and mage.
+1 carrion grub is really good against zoolock. Especially when you hit it with houndmaster on curve.
+1 eaglehorn bow
You should also consider running different traps. 1x explosive/1xfreezing or 2x freezing depending on how much zoolock you're facing.
Midrange beast Hunter decks will never have a great win rate against zoolock, it simply doesn't have the tools to matchup very favorably with that type of deck. my advice is to stop fixating so much on your win rate against zoo locks and optimize the deck for other match ups that you have a better chance of winning. If all you're playing against is zoolock this type of deck will never be the answer.
I don't think you should be playing 2x Tundra Rhino, ever. It's a great card in specific situations, like when it's hard to remove in one turn and you have a Highmane in hand, but you don't want to be stuck with it as your only 5-drop in hand.

Wondering what to remove to insert 2 Kindly Grandmother when One Night in Karazhan will be out?

I would say infested Tauren or huge toad.
I'm thinking Infested Tauren too.
Might not need the extra taunt in the new meta after all the cards of One Night in Karazhan will be out.
