Not having watched the stream and under complete speculation, when I read it "targets" adjacent minions, I think it means it hits the one you targeted for 1 damage (or whatever) and it also hits each of the ones next to it for 1 damage. I don't think it means you activate inspire on your cards 3 times. You are still only using your hero power once, it just "splashes" to adjacent minions.
Again, pure speculation since I didn't watch the stream, but that's my take on it.
Highly doubt it. Team 5 have little to no consideration for WIld and the Inspire mechanic is not one that they plan on bringing back.
As mentioned, the Spirit states "Target", so it will work with the Bloodreaver Gul'dan hero power, Dr. Boom's Zap Cannon and technically also Dinomancy in standard (if you are somehow able to get the card in your hand/deck) and bunch of others in Wild.
What will be interesting is the power-creep of the Inspire cards in other ways in Wild.
It may hit multiple times but you only use the power once. Jan’alai and Pyromaniac activate based on damage dealt by the hero power, not how many times it’s used. Hence multiple hits work with those cards per hit.

Although when the spirit was paired with Ice Walker , the hero power didn't freeze all 3 targeted minions on the reveal stream. This might be a bug that may be fixed by launch as Peter Whalen seemingly confirmed that it should freeze all 3, before the card was played.

That does seem like a bug. The text of the spirit says "also targets" which suggest the 3 minions are all considered 'targets'. Thus minions that 'freeze on target' SHOULD in theory affect all three.
If not then the spirit probably should say "also damages" instead. That would have it not be affected by Ice Walker while still working for all of the other cards (which just increase the power or cause an affect based on damage/death)
Okay, here it is. On 32:40 on the stream Peter clearly tells Regis that Ice Walker will freeze all three targets. But then on 37:40 they try to do it but then it actually happens to not work.
So, or Peter doesn't know his own game, or it is a bug. Clearly.

Because THAT would be insane! Imagine activating Mukla's Champion 3 times at once, Kodorider or Nexus-Champion Saraad.

Yes. When used with the DK it will summon Waterelementals accordingly. They did it in the stream and it worked :)

No, it won't activate Inspire three times with one use. Inspire is triggered by clicking the Hero Power button.
