I have played 10 games as APM priest. I've literally played against 8 Heal Zoos and 2 Odd Rogues.
I swapped to Odd Warrior to counter that. I've faced 2 Togwaggle Druids and a Mecathun Warlock.
THIS! I played Mecha'thun priest and faced a ton of aggro decks (mostly zoo and odd rogue). Switched to Odd warrior and played it almost exclusively for 3 weeks: Mostly combo decks, deathrattle Hunters and Evenlocks. When I switched to more aggressive decks I faced odd warrior. Played a few combo decks: instant aggro.

I played hundreds of Tempo Mage games back in the Vanilla/Naxx/TGT days and then again in the LoE meta (got as far as rank 7 with it) and I had plenty of games where I lost because I did not draw a cheap/well curved hand that provided pressure I needed to apply against control opponents.

A format that lets you use every card won't have the same balance as a format that restricts the card pool. Eternal formats (ie wild in HS) are not meant to be the focus and epitome of balance. Sure it could use tweaks now and then but it isn't supposed to a game mode with small plays.
As for not running into non-netdecks I don't have much to say to you for your situation. I have over 150 screenshots currently clogging up my desktop because I still need to organize and delete some of them and I have tons of non-net decks in casual wild.
