There's a few decks I'd like to try out. But in a few weeks, lots of cards won't be available, so I don't want to include those for practice.
I know the new set hasn't been fully revealed yet, but has anyone built a winnable deck that does NOT include any of the cards soon to be cycled out? (I'm particularly interested in trying out Priest, Hunter, or Rogue)
Typically if you play a certain deck style vs deck it should be easy for you to play new and different variations of them.
As for trying to not play with cards going out of rotation. I don't think that should matter much. Also there is absolutely no way of knowing what will be good and usually a stable meta won't happen for at least 2-3 weeks after the set especially with the new year kicking off.
But if you're really excited and want to try what might (tbh probably not) fun or good to play

really any top meta rogue right now.
just google the lists or find them on this site and try not to craft anything too significant. Make sure to take advantage of the hall of fame dust too!
Well Tempo Warrior is getting a lot of cards to try out, particularly Woodcutters Axe and the rush minions. The deck was hit hard by the loss of War Axe, but I’ve still played it to rank 3 in wild a couple months ago. You can check out my list below if you want some ideas.
How do you want to practice for next cycle when decks will be completely different then including your own? You're not learning any matchups. Only thing you're doing is handicapping yourself.
Cubelock is likely the only deck that will still be playing essentially 0 new cards. They might play Godfrey, but that's likely it as they keep 27 cards of their list which should worry Blizzard more than it apparently does.
Big Spell Mage is in tact. Ice Block is gone, but I don't personally run it. Same for Medivh and Firelands Portal. The biggest loss to me is Dirty Rat, but there aren't a lot of combo decks these days so it's not all that crucial.
I don't really see any cards from the new expansion that fit into it (yet), but the rotation should hit secret Mage hard, which means one positively awful matchup will go away. Spell Hunter and Big Priest are losing their big early win condition, too, which leaves the deck with very few polarizing unfavorable matchups.
It’s hard to predict what decks will be good for Priest, Rogue and Hunter, since all the major archetypes for those decks are losing quite a bit of cards. If I had to make an educated guess though, I’d say the three best for those classes would be A) Face Hunter, B) Miracle Rogue and C) some variant of Spiteful Priest.
If you want to know what the best deck in the Witchwood meta is going to be, well it’s pretty easy to guess. It’s most likely going to be Cubelock. It’s losing Mistress of Mixtures and N’Zoth, which are pretty important. But it’s getting Lord Godfrey, which could easily be the best card in the Witchwood set.
I'm a new player (3 months, Rank 10 currently), and I'm thinking of jumping onto the Priest bandwagon, so I'm hoping to buy myself a few weeks of practice in either casual or ranked.
I've seen Malygos/Velen OTK version of it lately, it plays very differently than the typical fish-out Y'sharrj and it might be the successor.
Barnes isn't a devastating loss for the deck, but the AOE spells -- SW: Horror and Dragonfire Potion -- are.
/Depending on the aggro, thief priest may return as a decent meme deck. Hasn't been a deck to sanely take to the ladder since Un'Goro, and Silver Hand Paladin is one of the worst decks to steal crap from.

Cubelock is not losing too much. You can swap few cards and start practicisng "post-rotation version" (kinda).
