Why do you want to use cards in your opponent's deck, your cards don't synergize with?
I know that it might be weird to you but someone just wants to have fun... With thief priest/rogue all the games are different and well, sometimes you even have to think about your next plays, its not like a paladin deck.
It is more for fun. Joking aside, with priest's Heal power and efficient (usually) board clears, they can live long enough to use the cards they steal. Against aggro, they can just heal up and double the health of taunts. The occasional Spellbreaker, Tar Creeper, Acidic Swamp Ooze, and Lich King don't hurt to steal either. Against control decks, like warlock, you can take powerful cards like Defile, Voidlord, and of course, Carnivorous Cube.
One game, I managed to cube Hadronox. That was fun.
Another, I stole the ENTIRE Shudderwock combo, minus the damage, and overwhelmed the shaman before he could draw it. That was fun, (although it gave me a 60 card deck and was immensely difficult to think of what cards I actually wanted to draw).
And yeah, it's hard to use. You have to think and decide when you have enough time and mana to steal and use cards while trying not to die, but that's what makes the deck so rewarding! Just my take on it. Hope you enjoy your games too
