There are a few that I'm considering (neutrals mainly), but if anyone would be willing to give me some input, I would much appreciate it. I thinking about crafting one of the following:
Honestly, it depends on the class you want to work on next:
Archmage is a critical card for mage. Every high tier deck runs him. Thus if you want a good mage deck, he's a big one. Saraad is a great card, but specifically for Tempo decks like Tempo mage. You need Archmage first, though.
Paletress is a very useful control preist card. Not CRITICAL, but given that you don't have Ysera, you need something. Though you don't have Vo'jin either and that's a bigger priority for priest. Thus if you want to go Priest, highly consider vo'jin and think about Paletress later.
Justicar is a great card for control warrior and midrange paladin. Honestly, I'd put both into critical theses days. You don't have Grommash, though so if you want to go Control warrior, you want Grom first. For paladin, though, if you want to go midrange, Justicar is a good pick.
Jaraxxus and Mal'Ganis are critical warlock cards. I believe Jaraxxus is the first priority there as that is enough for traditional Handlock. For the more powerful Demonlock, you'll want both.
Unless you hate all of those classes, these are your priorities. After that, Consider TBK and Ragnaros (wow, Rag this far down.. how times have changed).
Juggernaut and Varian are meh tier. I have Varian. Don't get Varian :P.

I guess I don't necessarily hate any of the classes and I feel like I'm half-way to a competitive deck with any class that I play. And it would seem that the only stand-alone cards I could craft are Justicar, Ragnaros, and TBK. What decks are really considered competitive these days? I really like Priest and wish I could play handlock (don't have a lot of giants though). I like the idea of Demonlock a lot.
Your possible future legendary list is pretty good. It all depends on what type of deck you want to create, if you want to make a effective tempo mage you would of course chose the Archmage Antonidas. I would suggest you to make the Archmage Antonidas, since you can use this legendary with a lot of different mage decks (mech mage, tempo mage.)
For the list you show and you play indications ill go for Achmage Antonidas akey card in almost every mage archetype ( and for me with tirion the best class legendary of the game)
i have confesor paletress and is better thani though but is on the same niche than Ysera so normaly for that ill go for the neutral one.
Ragmnaros will always have a placein my hearth and even if now isless played than before is a "joker" card thatcanbeused instead other legendaries. For example y dont have Rhonin for a high mana curve tempo mage i can put Rags.
the two warlock demons are always good and tier 1 class legendaries. i dont play warlock but i have seen enough of these to hate them both.
TBK is a great tech legendarie but seldom use now. As all tech legendaries isbetter to craft in high tide of usefulness.

One does not simply walk into Mordor,
unless they want to be the best they can be.

Don't bother with varian
with the right cw build, varian is very very OP!!!
check my control warrior list... he shines in that one!

No reason to craft Juggernaut, IMHO.
Varian is only useful if you have plenty of heavy minions left in the deck and spells were already drawn.
So he's pretty situational.
