Where the ranks around rank 5 were dominated by decks like even shaman and odd rogue decks haver emerged to battle those decks like dragon priest... Now the logical thing to do is to find decks that would beat those decks as their main focus is batteling the board... What would be a good deck that would theoreticly (is that a word?) win from those decks?
thank you all...

You could logically go for the standard Mechathun Priest, because its one of the fastest decks, while being able to stall for several turns. You have to be aware of the existence of Dirty Rat, but that's a risk you would have to take.

Exodia Mage does the same, but better while it's not as bad against Rat because you can replace a pulled Sorcerer's Apprentice with Simulacrum and it can pull non-combo cards.
I think you asked the wrong question. If you're asking about decks that beat odd rogue, even shaman (that would be priest) or like you asked - counters to counters (in this case control decks) = OTK, combo decks.
When I play Even Shaman, I hate seeing control priest or odd warrior, if that answers your question. A lot of the answers you received above were for Wild, but I assumed your question was for Standard.

Unless you're experienced enough to know that one does not play Dirty Rat unless you have a direct answer for the pull.
That's not how it works. Lets suppose I play Emperor Thaurissan and reduce all my combo pieces, basically announcing to kill you next turn. As a response you Dirty Rat and pull a Sorcerer's Apprentice and kill both, the Apprentice and the Emperoror. Next turn I can Simulacrum the other Apprentice in hand and the turn after that I can still OTK, because four reduced combo pieces are enough for the OTK.

I think they kinda misunderstood you. You seem to ask specifically about countering the decks that beat Odd Rogue and Even Shaman decks
Lets divide it into few categories:
1.Kabal Reno decks: Holy Reno Triada because of the access to Kazakus and Highlander legendaries at some degree as well. Their huge weakness is Mill Rogue and any stupid Highroll deck. Big Priest cheating with Barnes is pain in the ass against any deck. Jade Evolvewock Shaman surely can take the win from them as well. Another weakness of Reno deck is another pure and powerfull Control deck. So that means another Reno deck or something like DMH Control Warrior. Control-Combo hybrids are pretty good too.( to name a few I would say Cubelock and OTK Reno Priest)
2. Board centric decks like Dragon Priest,Mecha Hunter and so on: Their counter is any deck that consistently clears. So basically any non- aggro Kabal deck,Warrior deck and other odd Control classes as well. Combo decks like Exodia Mage can win this matchup as well
3. Odd Warrior and other non-infinite value Control decks- Yes. They are powerfull against Even Shaman or Odd Rogue, but they got completely *ucked by nearly infinite value of other control decks. Especially Kabal ones. Combo decks like Exodia Mage,Hakkar Druid,Mill Rogue or kinda weird Jade Druid that has it own category can beat you consistently as well since almost all good neytral deisruptig tools are even.

Always expect the unexpectable!
How about ask question 1, what beats even shaman?
Odd Warrior and Reno Priest are highly favored against it, Spell Hunter, Big Priest, Evenlock and Renolock are slightly favored.
Exodia Mage does the same, but better while it's not as bad against Rat because you can replace a pulled Sorcerer's Apprentice with Simulacrum and it can pull non-combo cards.
