Remember that it still is a "Choose One" mechanic, therefore it won't work with "trigger Deathrattle" effects (like Spiritsinger Umbra) and if it gets summoned via, let say, Firelands Portal, it'll be just a 5/3 without an effect.
If you look at the conversation below (N'Zoth) that's not true, and nowhere does it say "Choose One" on the card. However, you're right about Spiritsinger Umbra; no effect!

But I chose secretely.
I have been using the Fatespinner in my Wild Quest Druid deck, and I'm surprised how good the card is working out for me. At first, I thought it was going to be replaced...but it has done a lot of good work helping with board clears, and sometimes buffing my minions for an extra burst of damage etc.
Has ANYBODY played this card yet???

I like the fact that N-Zoth Druid didn't work all the time since Druid doesn't have good deathrattle minions (except Mounted Raptor). I hope Blizzard introduces more of this secretly deathrattle minions!
Does it get summoned back from N'Zoth, the Corruptor?
And if does, does it record the deathrattle I chose or will simply does nothing when it dies?

Since "choose" options are battlecry mechanics, the minion wont be revived as per it not being a deathrattle minion, but rather a choose minion......boom
Yea it does get summoned, and with the deathrattle you chose (Tried it myself)
Woah. I believe you, but that makes no sense. Moat Lurker doesn't remember its battlecry target, so why should this card remember what you picked?
actually Moat Lurker does! played it plenty of times before, haven't checked recently but I've Moat Lurker'd my Hadronox and gotten a bunch of value from it.
That's not what I'm talking about. I'm saying if you revive a moat lurker, its deathrattle no longer does anything. For example, play Abomination, moat lurker the next turn on the a-bomb. Next turn, the moat lurker dies, giving you the a-bomb back. So far, so good. Then, you play Onyx Bishop and happen to get moat lurker. Oh joy of joys! The value! Only, when this moat lurker dies, the deathrattle does nothing. That's because it's a brand-new moat lurker; it never hid any minions and has no idea what the original moat lurker ate. The reason this card is different must be because the choose effect transforms the minion. That means this card literally turns into another card with the same picture but with the new deathrattle instead of the choose effect (see transform: https://hearthstone.gamepedia.com/Transform).
This is not mentioned or even hinted at on the card.
When you play Tomb Lurker and it gives you Fatespinner you get the token back. Kind of a weird interaction, but I suppose it makes sense.
