Is there a deck out there that'll be timeless for you? Doesn't matter if it's a deck that's new or old.
My favorites have always been Mid-range Hunter, Control Warrior and my personal favorite Hadronox N'Zoth Druid. Though the two former have slightly fallen from grace for me as they don't feel nearly as strong as they were in the old days of Hearthstone and I don't get the same satisfaction everytime I play them than I did before...least until Blizz fixes the Hunter DK I think.
Wow I completely forgot about that deck till now...Haven't faced a single one since GvG and I play alot of wild..wonder why tho it still seems like a really good deck
I've always loved Renolock, and with the nerf to Raza priest (my worst match-up in Wild) should get some love the next month from me.
As for more off-beat decks, I've always loved my Reno Hunter deck, which was the greatest back when aggro/face hunter was more prevalent. They'd dump all their removal early (if control) or race me to face (if aggro), and then be in for a real surprise when the game was totally not what they expected. The most fun match up was against control warrior, who probably thought it was insta-win going against a hunter and then be in for a surprise when I baited out their two Brawls early and then ran them through fatigue. It did pretty well until MSG came out and power level ramped up.
Even further back, my best deck was a Kel'Thuzad/[card]Troggzor the Earthinator[/card] hunter deck. Had a 80% win rate to rank 4 (this was sometime around TGT or the expansion after that), the month ended, and then some expansion came out and it couldn't compete with the new cards... think it was one of the Shamanstone expansions. That was my single greatest "wreck the meta" deck I came up with. I think KT and/or Troggzor should make a comeback one of these days... the meta is slowing down enough that they should be viable in the right wild decks again.
Big Priest. Man I have loved that deck from the first time seeing it. I know its a lot of RNG, but I enjoy it so much.
Second fav, any warlock deck. I have always loved the Warlock class, mostly Control Lock has been my bread and butter, I got into the cubelock for a bit but kinda got bored of it.
Definitely has to be Thief Rogue with Ethereal Peddlers. So many options and unknowns so it's always a surprise. Alternatively, I probably go back to Ancestor's Call Malygos Shaman at least a few times a year to surprise people in wild.
I know so many people hate that deck. Sure, some times it fails with no chance of winning, and some times it literally plays itself ... but when you actually work to find the outs ... play 2 or 3 turns ahead, knowing when you need to freeze, and when you can take damage ... or the best part ... winning without the quest ... it is just so damn satisfying.

Mech Mage.
Rumors are carried by haters, spread by fools, and accepted by idiots.
My favourite decks were always non-competitve but i have to mention the strongest deck of all time: " Secret Paladin".
Sylvanas Windrunner
I have no time for games.
ApDrop's Concede Shaman (https://www.youtube.com/watch?v=e9E9ZhN-Jhw). Unfortunately we can't play this kind of decks anymore...
Control Paladin duh
Any Shadowcaster factory rogue deck, with the inclusion of Valeera the Hollow.
Miracle Rogue since 2016 as it offers so many varieties to build.

OTK Worgen Warrior and Malygos Rogue. I really miss the first one.

Control Warrior with Justicar
My favourite decks are probably C'thun decks. C'thun priest especially.
I actually played against C'thun paladin today. There is first time for everything, i guess.
