Evolve shaman is a lot of fun. You should watch Asmodeus Clips on youtube and see how he builds it for control or aggro. The control version is more interesting. Evolve is a fun mechanic in general because it gets you random results so the game is always different in some way. Every expansion since Old Gods I've been building evolve and it's always competitive and always a blast. Highly recommend.
If Exodia becomes the meta for a week or longer, it wont be nearly as much of a problem as Jade. The only thing needed to beat exodia is a good curve and Eater of Secrets if you can't get through the Ice Block. I beat this deck into the ground with Hunter right now, and I run zero answers to it. It's not a big threat. Combo decks like this are really rare in hs so I don't think we should look to cull them all. It hard counters the best ladder decks in the game right now, that's a good thing. It means not only can Jade and priest lose to something a high percentage of the time but also that lower tier tempo decks have a solid matchup floating around to give them wins. Bring on the mages.
All the epics you mentioned are lame. Craft Uther or Rexxar. They might get better after rotation. Either that or craft some good epics and rares instead of bad ones.
The strongest thing you can do in the game currently is build a large board of strong minions while using as few cards as possible. SP does more than most decks can with one card, it's too powerful, simple as that. there's nothing in the game that beats it for value.
6 mana summon a 1/5 taunt
Yep, great value. Or maybe it's your own damned fault for not playing around it.
Remember to do your breathing exercises.
its not 6 mana summon 1/5 taunt just like unleash isn't 3 mana summon a 1/1 charge. It's never the minimum value. In magical hypothetical world where you live maybe you can always "play around it" and still win but for those of us in reality its probably still too good.

Looking at your list, I think you need some taunts. It looks solid on the deathrattle plan and Abominable is getting good targets but i don't know how you get the opponent to kill him or how you get to turn 7 without taunts. Forlorn Stalker is a really weak turn 3 unless you're against a priest or something slow. Every time I've played it I haven't liked it much. My suggestion would be to lose it for Tar Creeper.
The Bloatbat thing also makes me cringe. Im possible to activate on its own so you have to save Play Dead just to use it. Against a token Druid it might be decent but against Pirates or shaman that is way too slow and too much investment.
You're definitely missing Tracking. Being able to dig for win conditions and answers is huge.
Grandma and Rat Pack are also not very controlling cards. This deck looks more like a very grindy tempo deck than a control deck the more I look at it. Here's a decent combo you might like that uses Play Dead very effectively: Defender of Argus and Devilsaur Egg. What to take out would be Terrorscale Stalker and Bowman, he's just too slow and doesn't have taunt. Stalker is a vanilla 3/3 way more often than you want. Your cards should do exactly what you want them to do every time you play them.
Bonemare sounds like money to me in a deck full of sticky minions too I don't know what you'd like to dump for one of those.
That's my advice on the deck, looks fun, hope you like some of the changes.
Ragnaros used to top off the pre-rotation midrange hunter as a finisher. I dont see why we wouldn't want The Lich King as a Dr. 8 in midrange now. I know what I don't want: 2/2s for 4. Arfus is actually a worse tempo card than Stitched Tracker and the Death Knight card might not even be useful every time. The risk of having it stolen by priest or just being way too slow is too high. I get the Corpse Widow reduction but that's still a 7 mana play and why aren't you running Nesting Roc instead? 1 less hp and NOT taunt for a chance at a decent turn somewhere in the mid to late game. I'm not seeing it.
So you wont want this in pirate warrior because the deck is saturated with cards that all do the same thing. Any draw is going to be fine, there's no reason to draw extra cards in a turn. Maybe a 1 of if you absolutely need it to go late with pirates but i doubt it.
That said, this can't be looked at as "2 mana: draw 2". You can only play 1 weapon at a time so this should realistically be looked at as "2 mana: draw 1 and burn 1 card from your deck." I don't think that's a good enough card to justify a slot in control decks. Control wants to be playing a variety of different effects in the same deck so being restricted to weapons when you might want armor gain or a taunt minion isn't good.
I might be willing to pick up a copy of this in arena but then I'd want to make sure I have enough weapons, and I also run the risk of drawing my weapons early when I want them and this becomes a dead topdeck. Really too many reasons why this is bad.

Looks good. Decisionmaking, ok base stats, immediate effect, creates tempo, pretty solid.

As far as control hunter suggestions, here's a list I came up with for you if you want to try it.
