I cant wait to build my CW deck for Thursday, but going into the future....just a question of Which card at 2 mana do you think is better for CW in general? im not considering The Quest but just a general Card.
Sentry has a "lesser" drawback in the fact you can whirlwind or attack into the Snakes
meanwhile dirtyRat is what it is, i was gonna consider just staying with the Rat, but let me know you thoughts.
I'd say Dirty Rat is better, it can waste powerful battlecries, and you can combo it with brawl. I don't know if you'd want to waste a whirlwind with Cornered Sentry, since it's probably better to save it to combo with Sleep with the Fishes or King Mosh.
Do you have a rough draft of your deck list? This might us help to decide. But for me, I will go with Cornered Sentry aside from you can deal with Raptors easily you don't want to pull Tyrantus from your Dirty. :D

Dirty Rat is truly better based off the potential. Cornered Sentry at best has the potential to be a 2 mana 2/5 taunt after you Whirlwind or Ghoul the Raptors or a high roll increaser if your opponent has a board of 3 or 4 good minions on board for your Brawl, essentially giving you a 50/50 chance for a great result (your sentry or one of the Raptors win the brawl).
Dirty Rat on the other hand has the ability to break up huge combo pieces and game strategies. Imagine Dirty Rat the turn after your Paladin opponent completes their quest for Galvodon. Sure it's not a guarantee that you'll pull Galvodon, but if you do, you win the game... The same goes for the Priest quest reward, the Druid quest reward, the Shaman quest reward... Imagine pulling Archmage Antonidas so that the Mage can't pull the inifinite damage combo... the potential is just so much higher to literally ruin your opponents win condition.
Edit: if Dirty Rat sees a lot of play, then players with minion style quest rewards like Galvodon may even opt to wait to finish their quest so it can't be pulled from their hand which plays directly into your CW's hands to get to your late game win condition and armor up a ton. Either way, control warrior is coming back in a big way this expansion and may be the haunting nightmare matchup for many decks.

If they silence or hex both of your Direhorn Hatchling and you can't take a taunt from Elise the Trailblazer, you can't even complete your quesst. I think you should add 1 more taunt to your deck.

As much as I agree with you guys about the Dirty Rat I am just afraid to pull a very large monster from it. And this new expansion has a lot of it. Anyway from your list I have to agree the Rat wins. :)

Dirty Rat acts as a combo breaker since it can pull battlecries etc. while Cornered Sentry is going to increases the likelihood that your opponent gets a terrible minion post brawl. Personally I'm going to run Dirty Rat over Cornered Sentry for denying things like quest minions or Kalimos, Primal Lord.
