I wonder if someone out there could please take a second and tell me how Jandice is used.
There are several decks she is included in, but I don't see the benefit of picking one of 2 RNG 5 drops that dies when damage comes in. Is it that there can be some awesome 5 drop which gets summoned, or a specific situation where the card is really good?
The card is always good. As every other card there might be times when it sucks but overall Jandice is a very strong tempo card. You usually develop a bunch of stats for just 5 mana and while it's usually very predictable (99% of the times you pick the smallest minion) it still means that you get a 2/1 and 2 5-cost minions for just 5 mana and even if one dies to any damage it still means your opponent still needs to spend mana and resources dealind with that. And even after that you still have a 2/1 and a 5 drop.
The odds of a truly terrible outcome from her are really low and the upsides can be game winning or game changing in your favor. Your opponent doesn't know which one of the minions was chosen to be "fake". And they usually won't be able to ignore the board because it's just too many stats and too much damage. There will be situations where the chosen minion is pretty obvious so this is a negative. And there will be situations where you will get such a bad outcome that it might actually make your turn really bad but these will be really rare. And it's a good thing that she has bad outcomes. Otherwise, she would be way too good.

Please also keep in mind that Conjurer's Calling and Potion of Illusion can push the card to a galactic level.

There are 92 minions that cost 5 mana in Standard at the moment. Out of all these only 4 are truly horrible (Desert Obelisk, Blood Herald, Jandice Barov, Chromatic Egg), 7 are bad (Faceless Manipulator, Stormpike Commando, Starving Buzzard, Shadow Sculptor, Big Game Hunter, Hailbringer, Skyfin) and 2 can either be game winning or a total liability (Mortuary Machine, Venture Co. Mercenary). The rest are either a decent/good/great/amazing pile of stats or provide some really useful keywords and effects (taunts, rush, deathrattles and so on).

If everyone chooses the littlest of the 2 minions to tag, then why aren't opponents choosing to attack the proper one each time?
Because some players bluff.

In game I typed Jandice and of course it comes up for mage and rogue.
Interesting.
I don't think Jandice can summon herself anymore due to the recent patch.
As far as i know, the patch only changed how minions are generated in hand and not directly on the board.
