I hate fellow Priests who focus on being 100% reactive, removal and only removal and going into fatigue constantly. That's just lame, man. What are we, holy Freeze Mages? I like to lean a little more in the direction of midrange, using Velen's Chosen to create serious threats.
The stealing, though... I suppose it is annoying, but too much fun not to. My Apologies.
Honestly Control Priest is pretty hard class to play, oftenly I muligan something i cant play early on just to get 2 circles and/or 2 Lightbombs and Entomb. The biggest problem with priest is to stay alive early on vs decks like Zoolock face hunter and Paladin, this 7 minions are pretty easy to remove if there is no velen's chosen and Deathlord is the biggest shield which is actualy a baddd card on its own, and priest doesnt have that efective midrange creatures paladin does, Cabal is hit or miss card so mehh
Well let me provide insight to why priests steal. Priests also practice shadow magic some get really into it these are the shadow priests and instead of being so helpful they basically cause opponents to go insane with their magic. Out of these various spells one is called Dominate Mind or originally Mind Control and it allowed players to control another player's or an NPC's actions for 8-30sec. (8 for players, 30 for NPCs) Really those are the only reasons why priests use mind magic.
I honestly don't get why so many people have a problem with Entomb. Is it purely the psychological effect of having your card "stolen" instead of destroyed?

It's not it. When you cast entomb - it's already close to lategame. It's time when big minions matter. If you steal big thing, you not only destroy it without triggering anything, but you also add big thing to your deck. Thus, instead of two slots: full removal and big minion, you just put entomb, and can use second slot for something else (like, early game removal).

single target removal, with silence included plus getting an extra card of argueably above average quality in your deck is just...infuriating. even more so if said card of above average quality happens to be your wincondition.
I guess it does, for some specific deck archetype like the LOE control priest.
I have my golden priest, though i almost never played control priest because i don't like the gameplay. It's not rewarding, it's slow, and it's annoying for everybody. I play shadow or miracle priest for the most, dragon priest sometimes. Miracle priest is really great, with shadowfiend and auctioneer, you can just cycle through your deck so easily, just throwing a bunch of 1 mana spell and set an OTK with velen or something like that.
There's so many underused priest cards because everybody just copy/pasted that trendy, fashion control priest archetype. So i can understand why priest can be so annoying. Entomb is too powerful, for the same cost, Recycle is not even as strong as entomb.

It's great when opponent's inevitably play into it. It sucks when they simply refuse and I have to Entomb an Azure Drake or Shredder or else die, and THEN they drop the goods.

For me Priest is actually the most annoying class to play against, simply because of the way their removal spells are build. Everything under 2 attack gets stolen and killed, everything below 3 attack also simply dies and so on. Then there is the single most annoying card blizz ever printed, Entomb. Like I'd rather get rekt by a secret pally, because you don't get punished by playing your cards against them, but against priest if you play the stuff with wrong attack they take/kill it instantly or simply take it if they like your card.
That said, I don't have problems against priest. I am actually winning most priest matchups, but it's just super unfun in my opinion.
Look at the game and see how many 4/x cards that have been introduced to the game. That's annoying as a priest as you can't do anything with them. No other class is at an advantage to a specific card characteristic.

I find priest to be one of the most balanced classes in the game, so no I don't find it annoying at all.

Entomb is totally fine at 6 mana.
