I've always wanted to make it work, but you're right that it isn't really used. Since it is golden, you could disenchant it and craft any legendary you wanted. Or you could try to make him work in maybe some spell druid deck? I'm sure he could try to fit in there, but then I guess Gift of the Wild is just better haha.
My vote: disenchant and craft what you want, and don't look back.

The golden (pun intended) rule is: never disenchant a card until you actually need the dust. Now in the case of a golden legendary, if you could actually use the dust to build some other deck, dusting it is a very 'safe' decision. Even if you somehow end up wanting to re-craft it some months later, all you've lost is some shiny design and zero dust or functionality.
If you're not playing a card what's the point of keeping it? It's been ages since he was even remotely decent, it's not even used in quest druid, that should say something.
You know, Quest Druid is still a thing. I piloted it to great success before the rotation hit, and depending on the upcoming support, it might keep being viable. Ashes expansion was very meager on Choose One cards, but the archetype is still solid. I LOVE using my golden Cenarius in this deck. I say keep it.
If the next expansion comes with a bunch of new 'Choose One' cards, Quest Druid might become a playable deck again and in that case Cenarius would definitely be worth putting in. Although frankly I don't see how Quest Druid can ever survive against DH if you just more or less skip your first 4 turns...
You can always disenchant it now, craft later if needed. Since it's golden you will break even, even if you will have to craft it back for a deck you will really want to play.
Dust it if you already have in sight what you're gonna craft with it. If not, then keep it, or you just destroyed a card for no reason. When you figure out what you want, you know where to get 1600 dust.

Word of caution through. Cenarius is an evergreen card, just because its not usable now, that doesn't mean it wont be usable in the future. Just last expansion, Cenarius was almost a core card in quest druid. So unless you really, really want to craft a certain deck, I think it's more prudent to hold on to it.

I have a golden Cenarius and was wondering if its worth to get rid of, obviously its a Golden legendary but it's one that really isn't used

You should dust it. But wait for now until you need the dust to make something else
