Probably Paladin, though personally I find Priest more fun to play even if it is a lot harder to climb with.
You also have to take into account that the new greedy paladin lists run double Rag, Edric and Justicar (+ the N'Zoth package) so that's 8 legendaries right there even though you can definitely get away with a less greedy version. But Priest still doesn't require as much dust overall, especially since you can get away without running Cairne, since Priest has access to more relevant Deathrattles in Museum Curator and Shifting Shade.
I'd say start out with Priest. Most of the cards you craft, works in Paladin as well (Sylvana, N'zoth, Cairne, Doomsayer, Justicar) so that leaves you with a couple of rares that only work in Priest (Shifting Shade, Auchenia Soulpriest) so you're not "wasting" a lot of dust by starting out there.
He has Tirion which is almost best class legendary in game, now you will have to face him twice when he is brought back by N'Zoth just like Lord Commander
Played N'Zoth Priest vs N'Zoth Paladin last night. I stole his Cairne and Sylvanus with Entomb and when he played Tirion I responded with Sylvanus into Shadow Word Death so stole his Tirion too. Easiest game ever lololol.
I prefer Priest. It had access to amazing board clears vs aggro decks and the best tools vs control.
I dunno, aggro still is an issue for my Priest N'zoth deck. I run 2x excavated Evil and 2x of that card that gains control of a 3 or less attack minion for a turn. And it's still not enough or consistant enough. The damage just keeps coming.
i'd say PRIEST only coz it's one of my fav heroes to play. to be honest, paladin is also another one I like to play, but I prefer PRIEST over Paladin. personal taste.
but if going for PRIEST, one should also have Twilight Darkmender. As some have pointed out earlier, Priest somehow lacks good heal spells. The Darkmender is one good card for heal.
having said that... how many Deathrattle cards will there be in the deck? would it be better to just run a C'Thun priest instead?

Pretty much this. Priest doesnt have a lot of bombs, but against Pally you might have up to 4 sylvannas/tirions in a single game. Thats broken as fuck. That said Nzoth pally does much better against everything else, from aggro to control decks due to its ability to just outlast everything through crazy heals and walet bombs.

Lord Jaraxxus is the best class legendary in the game i think. And even maybe the best legendary all.

Definitely Paladin.
The main problems with N'Zoth Priest are
1. You need luck with your RNG( be it shifting shade or Thoughsteal)
2. You need luck with your opponent's class( Certainly facing a N'Zoth/ C'Thun deck will be to your favour due to the minions you can steal)
3. Lack card draw( mainly due to Northshire Cleric much easy to kill since Velen Chosen is gone)
4. Lightbomb is gone
5. Lack of burst damage
It's going to take a lot of dust to create the pally deck as the person above said.

i will say preist but that because i like that class and i make the deck, but paladin have more heal than preist and that is very weird
