And what do you heal? How many damaged minions will you have on board? Most of my minions are either full health or dead. If opp knows you have the quest the rate of undamged minions will bei higher.
reminds me of Dinomancy but +1/+1 more buff, heals the target for 3, the target doesn't have to be a beast, and the cost of the card to play it is one less. Healing 15 isn't hard to do as Priest, Running one Squashling can give you 10 health in the late game, but I can see you completing the quest in one turn with a well timed Divine Hymn and a board of damaged minions.
using your new hero power on turn 7 with one minion on the board as well as playing Blackwald Pixie allows you to heal a minion for 6 health, buff it by +6/+6, and have a 3/4 on the board.
Playing this and Zilliax on turn 7 gives you a 6/5 with divine shield, rush, taunt, and lifesteal
in fact, the hero power alone is insane. healing a minion for 3 and giving it the buff is effectively 3/6 in stats. We know that Reborn minions are getting some support in priest, so you'll have ample opportunity to trade them and buff the reborn minion.
pretty good power in this quest, better than some of the others we've seen.
Shadequill - ok, but doesn't activate t4-5 and then you have 1/3 of the quest
Ritualist - needs damaged high health minions (in play(!))
Crystallizer - ok, saw play in healadin and lucentbark druid. how successfull were these decks? are you going to sacrafice your northshire for this?
Defender - doesn't come before t6. Effectiveness depends on how much damage your face took. But even after the reborn effect: you restored max ~1/3 of the health needed.
Reborn minions: which ones does have high health? what prevents the opponent from killing the minon and reborned copy on his turn?
Conclusion: you'll have one third of the quest on turn 6.

I got your point, I know that the quest is not THAT easy to complete but the reward is great, if it was possible to finish the quest before turn 6 then it would be OP.
you could always play a high health minion, like Hench-Clan Shadequill, and cast Embalming Ritual to give it reborn before trading it into a high attack enemy minion, then healing it up with Divine Hymn and finishing up the quest with your hero power.
I agree that it's unlikely to see the quest completed before turn 6, but there are enough healing support cards that you'll be able to complete the quest one way or another.

Sounds easy enough. Moreso with the Reborn mechanic kicking about. The hero power is EXTREMELY powerful.

I don't think you could possibly be further from the truth.
Actually it is not, think about Hench-Clan Shadequill, Neferset Ritualist, Crystallizer, Reborn minions, Khartut Defender.
