The easiest way to explain these interactions is that Lord Jaraxxus is summoned as a minion, and then his battlecry takes effect, changing him into a hero. In this way he isn't affected by cards like Demonfire or Shadow Word: Pain but is still affected by those secrets (Mirror Entity, Snipe, Repentance and Eye for an Eye).
Interestingly, he is still affected by Sacrificial Pact, as he is a Demon even as a hero.
That doesn't explain anything at all - it's exactly what I said. His Battlecry changes him to a Hero, so he should never be affected by Mirror Entity, Snipe, and Repentance, which all activate after Battlecries, and have Minion in their card text, not Character.

Right before Naxx came out I was running a Miracle Mage deck of my own devising (worked pretty well back then) that used Spellbender. Normally it just ate removal, but I did have it catch Mark of Nature a few times :) Man that felt good.
No, because by the time Demonfire is played, Jaraxxus is no longer a minion, and therefore can't be a target for it.
If, however, he were to come into play without it's battlecry taking effect (Mirror Entity, Alarm-o-Bot, Deathlord) then you could use Demonfire on him, as he would be a minion and not a hero.
The only reason Sacrificial Pact can be used on a Jaraxxus hero is because the card text says "Destroy a Demon" instead of "Destroy a Demon minion". This loose definition allows a player to choose any demon on the board, regardless of where the demon is (friendly, enemy, or hero). All of the other cards specifically state that you must select a minion, making a Jaraxxus hero untargettable.
It is important to remember in situations like these that targeting conditions are not re-evaluated when the target or target status is modified. The reason Jaraxxus has his health reduced is that despite his new 'hero' status he is still the target. In other words the secret doesn't stop to say 'wait, the thing I was targeting is no longer a 'minion' so no go'. This is the same reason the poor Spellbender gets KO'd by Execute despite not being a 'damaged' minion.
