I would maybe cut one Bull Dozer and one Evasive Wyrm for a Town Crier (tutor Ziliax/Evasive Wyrm/Batterhead), and one Acolyte of Pain or Eternium Rover. Early game looks lacking. Also, with limited card draw, I am not sure how great Mountain Giants are in this list.

You seem to miss the point of what a Big Warrior is. Early on, you don't play anything, unless you need to remove the board. Throwing in 1-2-3 drops messes up the synergy. If anything he could add one or two Dragon Roars or one or two Omega Assemblies, to have something to play early on, or to get more value late-game. The only low-cost minion I would add, might be Archmage Vargoth, especially when you get him off Dimensional Ripper, it'll be a huge pay-off. But also works with Shield Block, Weapons Project and the aforementioned Dragon Roar and Omega Assembly. Last expansion I tried a similar list, but had Vargoth and Blatant Decoys in it, it worked somewhat well up to rank 5 and then the old story of meta decks shitting on any kind of creativity rises up again. The Mountain Giants might actually work out well, especially with a Boomship that can still throw them out late-game.
You can't add early minions into this deck. That would ruin the purpose of the deck if they aren't drawn early.
My take is to add an Archmage Vargoth and 2 Damaged Stegotrons and possible Ysera, Living Monument and/or Big Bad Archmages.
The Boomship sucks as it could literally pull out the best battlecry minions from your hand. Thanks for the input! I'll have to consider some of the recommendations here. I typically play this deck is casual mode so I'm not overly concerned about making this as competitive as possible on ladder. With that said I still think there is some room for tinkering based on your suggestions. I know the deck is really at the mercy of your card draws and aggro can be brutally challenging to beat.

It seems so, haha. I have to say, I haven't tried Big Warrior yet this expansion, been having too much fun with all the different Warlock decks, since the class was dead for such a long time. It is indeed probably too slow, and there are classes that can make big stuff appear much earlier than Warrior can do right now, as fucked up as that might sound, being the class that literally got cards to tutor them out of your deck and onto the board. Big Warrior is too fair, basically. Both Boom Reaver and Dimensional Ripper should've cost less to make them worth it in this meta. I'm happy they will still be around after the rotation though, they might become meta after all, at least for a while.

He runs Shield Slam already. And many of the other big spell cards will be used before you get to Phaoris, since it's all board removal. More spells = better Phaoris. Plus, Omega Assembly can then be used vs Face Hunter early on and late-game vs other decks for the value. You do not EVER want low-cost minions in Big Warrior. I've played it over several metas/expansions, played the absolute shit out of it when Recruit Warrior was a thing, and am absolutely sure of this. The only smallish other minion you can add is Ziliax, since you can use it early to heal up and trade and it combos well with Omega Assembly, Boom Reaver, the 2 Bull Dozers and Dr. Boom's discover hero power because of the Magnetic mechanic.
With the 2 mana cost spells you do run into a potential issue of getting a Doomsayer, haha... however the odds of doing so are greatly in your favor. But I wouldn't say potentially summoning some smaller minions "messes up" Phaoris as long as you have at least a 9 or 10 cost mana spell in your hand. Many times you deplete your smaller spells in the early to mid-game anyways. Of course the best feeling is when you have all of your 9 and 10 cost mana spells when you play King Phaoris but often times you just play it without being too greedy.
I'll probably be tinkering with my deck to add Dragon Roars and Archmage Vargoth.
I've updated the deck and played some games testing some cards out.
I got rid of both Shield Slams, it's only good against a slower meta which isn't this current metagame.
I added 1 Omega Assembly, it's useful for early game mulligan and late game value but running 2 cards doesn't feel good since it can mess with The Boomship... but it can make help discount Mountain Giant in the late game so 1 card feels right.
I added 2 Dragon Roars which has been very good for my Mountain Giant Synergy, against slow decks I'm playing Giant on turn 4.. against aggro it's been around turn 5 or 6.
Archmage Vargoth is just too situational and greedy just like Damaged Stegotron is really bad unless you pull it off Dimensional Ripper... which means playing this card in the mid-game means it utterly sucks hard with the current power level and there really isn't much of a Zilliax combo in most circumstances.
I've decided to stay 2 with Evasive Wyrms and added 2 Khartut Defenders. At least Evasive Wyrms let you make a favorable trade, keep a minion on board and fight for board in the mid-game. Khartut Defender let's you stabilize and stall to live another turn against aggro and has helped me win fatigue matches.
My thoughts on why I include King Phaoris: you may think he is an odd choice but it helps make Dimensional Ripper and The Boomship generate value when you get bad card draw and know those cards won't do much after you have played most of your minions. Or it can be used as a tempo swing to generate a lot of value in the late game to pressure your opponent when you have lots of spells in your hand. It's a situational card that isn't required for the deck but I do enjoy the high rolls along with Dimensional Ripper.
If the meta you're facing is very aggro-oriented, then Khartut Defender sounds like a great pick. If only Warrior had a way of buffing things in their deck and hand to make the Evasive Wyrms even more of a threat.
Phaoris is actually one of my top 10 favorite cards of this rotation, I've tried adding him in so many decks. In Wild I even run him in a Double Brann, Jepetto OTK deck, since most of the rest of the deck is spells. Phaoris seems to me to have more of a place there, since drawing is much easier and a larger variety of spells are at your disposal. The only down-side to it is getting it from Dimensional Ripper, but is still ok.
I'm also glad Warrior got a lower cost big minion in Deathwing, Mad Aspect. One that actually helps you fight for the board and is almost never situational, like regular Deathwing.
If you want to be insanely greedy, you might want to add Warmaster Voone. Having multiple Deathwings, Wyrms and whatever you get from Dragon Roar could be hilarious, plus it can help you get to play your giants out. But this is probably just a meme suggestion.
I love the meme suggestions, my thought for a greedy meme is Sathrovarr. The problem with this deck is the same as my Big Spell Mage Deck using King Phaoris just gets steamrolled by other aggressive decks so easily. Trying to stabilize the mid-game is key to lasting long enough to have your fun with the expensive cards. Although mage has more big spells to combo with King Phaoris, Dr. Boom is the MVP of the late game.
Big Warrior was viable last year with Woecleaver and the other Recruit cards they had to cheat things out early, but it's pretty rare you can get to turn 9 with so little removal in this meta. Priest can barely survive, and they have better removal, and resurrect. It was one of my favorite decks when they introduced the Recruit mechanic though.
