I think the reason why he said that is because it's a terrible topdeck so if you're behind on board and cards you can't use it to recover.

I have every single card for this deck except Sneeds and Bolvar, I have just enough dust to craft one of them. Which one is the better (for this deck)
And what can I replace the other legendary with? I have every single neutral legendary but the GvG ones..

Craft Sneed's.
Replace Bolvar with another Sky Golem. Works very well for me.
Took out Sneed's and replaced it with Ysera.
Sneed's is not as good as it is being treated, since its 8 Mana cost and I could prefer a Legendary that has a synergy with my Deck, then trying to rely on a strong Legendary from Sneed's.
Ysera is perfect for this Deck:
1) Nightmare gives you a nice finisher, the turn after you played Muster + Quartermaster
2) Dream gives you the chance to use Quartermaster again, giving you the chance to buff your dudes even more
3) Nice High ATK minion (obviously it gets killed often by BGH)
4) 3 Mana 3/5 Spell immune Minion for all those pesky Mages
5) Ysera's Awaken. Nice AoE clear or even a finisher. Its nice to have this spell, since Paladin doesn't have alot of competent clear (they mostly rely on Equality + Cons. / Wild Pyro + Equality)

For those who don't own Bolvar. You can replace him with Feugen. He has the same cost, the same health but 4 base attack. He maybe not as flexible as bolvar, but he surely does his work and is in the 4 ATK spot, so Priests still need to use some cards.
Only reason whyYsera isn't so great is because she is an easy target for Shrinkmeister+Cabal. With priest already being a tough match up there is no reason to give them an easier legendary to steal. Also Ysera is weak in the aggro match up, so running the dreaming Dragon could be a liability in multiple matches.
Tried this out last night on the EU ladder at rank 14, got ruined by warlock/hunter zoo and mech shaman, but did v well against both mage and warrior control
Cant play against priests. They just control every fucking thing..

Priests are ridiculously powerful after GvG. They easily got the best cards.
I am really fond of this deck. I managed to get "the dream" several times - it being 2-3 "guys" on the board + Muster for Battle +Quartermaster.
The next thing is Bolvar Fordragon. At first I had been reluctant to even include him in the deck, but it turns out that Bolvar, even if drawn in the late game, is still quite useful and synergises quite nicely with spamming the hero ability. Plus he's a silence bait (go Tirion!). Value-wise - Bolvar in hand turns your hero ability from "spawn guy" into "spawn guy and eventually give Bolvar + 1".
The only issue I have with this deck is the lack of card draw. It's not a big deal, I manage to finish my game with 1-2 cards in hand, but the previous-meta control Pally always made me draw into insanity. I'm considering putting Azure Drake for the sake of card draw.
In order to mildly negate card loss I've decreased the number of early game minions in the deck. I replaced one Shielded Minibot with one Coghammer. I know Coghammer may seem anti synergetic, but there are several instances when you only have one (good) minion on the board and then you can safely go :
throw all guys at enemy minions -> play Coghammer -> hit hero ability.
Another change I made is that I replaced one Zombie Chow with one Seal of Light. Believe you me, when I say that one Chow will always be enough. Playing second Zombie Chow (especially in mid to late-game) will likely result in the enemy regaining health with not really that much damage being done. Not to say that ZC is useless, it's just that one is enough.

Iis there any way I can play this deck without tirion, cairns, sylvanas and Sneed? There are any substitute for these legendaries?

If you don't have Sneed's Old Shredder I've found Kel Thuzad works fairly well in its place. If you can trade in your Cairne or Piloted Sky Golem on the same turn that you play KT then you're getting a lot of value.
If you don't have Cairne, another Piloted Sky Golem is the obvious substitution.
