I completely agree it feels lackluster sometimes. It has no card draw so that is one of the downfalls of the deck and if you have bad RNG you lose. Still a pretty good win rate though.
Decent deck. I've been playing slight variants of your V2/3 decks. First time playing a season in about 1.5 years. I did r25 to r10 with a 71% win rate.
This is a really good deck for climbing the ladder at low ranks. I hadn't played in a few months so started at rank 25. I climbed from rank 25 to rank 10 with 34W - 14L (71% win rate). Hopefully the 10-5 climb is just as smooth.
Here is my variation of Dragon N'Zoth Paladin. It's got a 58% win rate with 124 games played between last season and now (72 W - 52 L). I got to rank 3 last season.
Although this deck might be great at legend rank. I'd advise against playing it in lower ranks. I've been trying to work towards getting my golden portrait for rogue these past few days so have been playing nothing but miracle rogue on ladder. I'm playing this deck but with - 1 x deadly poison and +1 violet teacher. I've been getting absolutely destroyed the past few days. 13W - 29L and dropped from Rank 2 down to Rank 5. I've been struggling against Shamans (Aggro and Midrange) and Warriors (mostly Tempo) which are everywhere.
There is no best class. Several are really great and viable atm.

Midrange Bloodlust Shaman
N'zoth Control Paladin
N'zoth Dragon Paladin
Tempo Warrior
Patron Warrior
There are also a lot of decks on the rise that are still finding their spot in the meta like midrange hunter, control priest, tempo mage, control warrior, druid decks, aggro paladin etc.
Yeah, definitely. I've found LokShadows OTK Warrior really great against shamans for climbing. Miracle and control rogue may be better for legend rank.
With the abundance of shamans on ladder, I feel this deck is very mediocre. I've been trying to get miracle rogue to work but there are just too many shamans. 35% of my games today have been against shaman/warlock.
I've tried tweaking a mid range/control style hunter which is OK but seems to be in a weird place. I think it's an OK deck and it's fun to play but it's not top tier at all probably tier 2/3. It hides in the shadows of tempo Deathrattle rogue and mid range evolve shaman.
I had an opponent who played a 1 mana Brann + 9 mana Yogg Saron for about 30 spells. He was a douchebag and played brann about 10s into his turn then let the timer expire and roped 90% then plays Yogg.
If there were to be any cause other than randomness, perhaps there are just more possible bad outcomes than good ones? For example, opponent aggro deck appearing to have perfect draws every time could be due to the low-curving nature of the decks and the large amount of potential game-ending cards they pack that can seem like rigged topdecks.
I like to believe this and be optimistic and that RNG will come full circle and I'll get my karma equivalent of good rng in turn but sometimes there are days when I have such a bad game I'll quit the game and wont play for a good 24 hours or more. I was playing Zoo against another Zoo deck yesterday. Opponent had 9hp left and I had a full strong board (sea giant, councilman, 1/1 tokens) while he had nothing on his board. He would of been dead next turn. I was on 17 hp as well but had full board control. He had 13 cards left in his deck and 5 card in his hand. He plays doomguard (discards a knife juggler and a wolf), buffs it with power overwhelming x 2, taps and top decks his 2nd soulfire for exact fucking lethal. Seriously the odds of him getting that bullshit combination is 3.8% :-(

I'd say it's a equal for Shaman and Paladin. They both have several viable deck archetypes to play.
I've been having a lot of fun playing control rogue decks (C'thun, Malygos) and renolock (C'thun, traditional)
