Seems like it was already a 5/5 when you transformed it into a 3/3 and killed it. That it then spawns as a 4/4 seems logical in a way, but I get the expectation that it would have gone to 2/2.
I guess Turalyon is not a true transform, but a debuff, and that it therefor doesn't work like you had expected it.
I don't think it's a bug, but more a question of needing to have seen this interaction once to know how it works.

I could see it being more a quirk of Rattlegore's wording. It kinda can't be fully "Resummon with -1/-1" since most dead Rattlegores would come back with less than 0 health. I suspect that Rattlegore is mostly just a fancy way of saying "resummon an 8/8 version of this minion" and "resummon a 7/7 version of this minion" and turtles all the way down. Resummon with -1/-1 is a faster but less accurate way of phrasing that.
Like, does Rattlegore keep buffs from, say, Rampage? Have we heard directly about this? My guess is that if you Rampage Rattlegore up to a 12/11, he won't come back as a 11/10 when he dies, but an 8/8. If that's wrong, my bad.

So I attacked with the pala legendary and set Rattlegore at 3/3 but then he respawned as 4/4. That does not make sense to me.. what do you guys think?

Was he a 6/6 before getting the 3/3 enchantment?

Out of curiosity, how did you get a hunter spell as a paladin?
turalyon doesn't set stats permanently, just for when you attack, so everything works as intended
