So, which would you prefer to have in most situations if you had to choose - Onyxia or Elite Tauren Chieftain?

You can get Onyxia from a pack, you cannot get ETC I believe.
I really enjoyed Elite Tauren Chieftain in a Randuin deck I used to play before the tinkmaster nerf. Be aware ETC usually ends up hurting you more than helping, it's bad in the same way Gelbin is. So bad it's good (but not really).
Every good deck needs a solid turn five play, hence why nearly all decks run [card]Azure Drake[/card] . [card]Elite Tauren Chieftain[/card] is a solid play because it deals with both [card]Chillwind Yeti[/card] and [card]Azure Drake[/card] effectively. This being said, it would probably work best in a priest deck and the battle cry effects both players so it neither helps nor hinders any specific player.
Onyxia is the slightly more powerful card because it gives you more stats per mana, especially if you have cards to get maximum value from your tokens (like power of the wild in a druid deck, or Dark Iron dwarf to buff their attacks). While ETC is weaker because when played early, you don't have the chance to play the card it gives you before your opponent's turn, giving him the initiative on a possible response (and nothing is more annoying than getting your ETC killed by a spell power boosted "Rogues do it").
ETC is the hugely more fun and flavorful card that makes games more interesting, surprises your opponents and feels great to play.
So the question is: are you going for the most effective deck, or just something to have fun with? (And in the first case, is even Onyxia really your best choice?)

They're both kinda joke cards imo. But I have run Onyxia in a druid deck and it was fun.
It sounds like you're aiming to have fun, so I would say craft whichever card you think will be more fun to play with.
I don't have ETC, but honestly the cards that he gives don't seem that cool, so I would go with Onyxia for the "OMG so many tokens" aspect.

I'd go ETC. Just because this deck probably needs additional ROCK.

BTW I am trying Onyxia in a Token and in a Combo Druid and she can work a bit...
