Switched out Ragnaros for Assassin's Blade. Somehow feels more impactful, since with such kind of deck you need to get decisive advantage midgame anyway. And blade ends up less of a dead draw compared to Rags. Deck ended up sort of weapon-centric.

I love Assassin's Blade but given the current meta, I don't feel Rogues can afford much more life loss which is why I opt for the Ragnaros the Firelord instead of additional weapons. With spells, Spiteful Smith and Deadly Poison, I feel the deck has sufficient oomph to keep tempo through the mid game (using minions as well, of course).
Yeah, and I feel like 8 damage immediately is better than 3-6 spread over turns and requiring multiple cards. I also feel like Rag can pull you out of sticker spots than AB, and is more reliable as it doesn't need multiple cards. There's advantages and disadvantages either way, obviously. I stopped running Rag for a while, but I've put it back in.
Somehow Spiteful Smith almost always ends up as a hard removal/fireball bait. Ragnaros "baits" out the second one, although he does have immediate value.
Maybe I should fit in Earthen Ring Farseers somewhere to partially negate weapon health loss? It would be essentially different deck though.
I agree Rag is a really good as a finisher, but I feel that if you are behind, he barely allows you to comeback (unless enemy has only 8-health creature on the board), while being slow enough to hold you until turn 8.
Tink - Replace with another Sap, 1 Assassinate, an Owl or a Big Game Hunter. All of these cards serve a similar purpose to Tink, it all depends on what you think will synergies best. I prefer Assassinate, yeah it puts the curve a little high but Unlike Big Game you can use it on Minions with less than 7 Attack, and if your playing a aggro deck a 4/2 for 3 mana is useless. Owl isn't bad, I just don't like that it does not remove something from the board but it is better on your curve and also gets a minion out in return. Sap is similar, doesn't remove anything permanently but it is nicer on your curve.
Nat - Shiv, or Fan of Knives would be a decent replacement. You even mention using one of these cards in the opening post, I think Fan of Knives would be best though, with all the board flooding happening in the meta with Warlock and aggro I think an AOE with card draw is a great option to replace Nat with.
Honestly, I just don't get what happened since last patch. I'd run iterations of the decks you guys are all using before and get to rank 8-6 in no time, and then have some issues with going about 50-50. Now, I am just STUCK in the 15 range since the patch, and just keep having problems getting a win streak going. Not much changed in the patch, but it just feels like the Meta has passed us rogues by.
Of course, I probably just suck lol. On that topic, with these mid range decks, what are the best starting hands to shoot for? I have a feeling that I'm keeping the wrong starters and just making bad plays early on that put me too far behind.

I would agree with you. In the current meta, rogues just seem to be really lack luster.

Managed to reach rank 7 with nothing but Rogue, but now I'm having trouble just keeping my rank.
Like a lot of classes we are just adapting to the meta, we have the tools now we just need to use them. We are in no where near as bad of a position as we were back in November after they nerfed us into the ground. It always takes time for classes to adapt to the meta, at least we haven't fallen off the face of the earth Druid style yet : P

Which classes would you like mulligan examples for?
BGH for Tink is a great swap for these decks too. Simply put, the mid-range tempo Rogue archetype has answers to most aggro and mid-range drops and has trouble with generally 7+ atk minions (as they usually have 6+ hp). A BGH, or MAYBE 2, might be a great answer. Also, sap is awesome.
I'd run a BGH over ERF, and personally I'd take Spiteful Smith over Leeroy...
What? no ! Spiteful over leeroy? No way. Also Assassinate is better than BGH, Unlike Big Game hunter you can take out any minion with this no matter how much attack they have for only 2 extra mana. Also unlike big game hunter Assassinate will never be a dead or useless card, because if your opponent doesn't run 7+ attack minions a 4/2 for 3 mana is a terrible drop.

I'm having a really hard time justifying Pagle at the moment. He feels just too slow. :S
What should I do? He's rarely living long enough to get me any cards. Sure, he can be a bait of sorts, but he just feels like he's taking up space.
Pick a two drop that satisfies your deck with the current meta. I've started running Faerie Dragons, and I am not displeased.

@Frigno, just one thing to consider... With all the hunters / control warriors swapping out fearie dragon for oozes seems like a really good idea.

Hey I was just wondering why aren't yetis being used in any of these decks. I run basically same decks just with 2 yetis and works pretty well
Yeti isn't bad if you don't have the legendary's or other rares, but otherwise I think that the standards are better.
