Thoughtsteal is FAR better in control games where there are big minions and spells in the opponents deck. Vs. a (for example) hunter bum rush it is near useless.
You can compare it with Arcane Intellect, but the differences are clear. The RNG in this card is beyond annoying since you can get more than one copy of a legendary card the deck. (2-3xRagnaros the Firelord anyone?)
If I where to make a priest deck, I would problary not have it in a deck where I play on the ladder. If I knew what I was playing against I might consider it.
I think that shaman's are a controlly bursty type. With cheap removal spells, such as Lightning BoltLightning StormForked LightningRockbiter Weapon and the extremely strong Hex, they get early control. The burst comes mainly from Windfury + Rockbiter Weapon which can easily do over 15 damage in one go, and some spells to the face too can do serious damage.
It seems that you got some idea of what cards are good, but one of them is just crap :). Far Sight is just not good if you happen to draw a card that is less than 3 mana which shamans have plenty off. And it can also be replaced with better cards that help you control the board. Other cards that are questionable in this deck is Bloodlust, you already need to have alot of minions on board for it to worth it. Forked Lightning might seem great, and it can be, no questions about it, but against some decks it's just dead weight.
Buff cards like Defender of Argus is very good on shamans, since he can buff the totems. And Defender of Argus is just great over all, so I would just craft it right away.
Shamans are very fun to play, you can have everything from murlockman bloodlust decks to late game controll decks. I suggest that you look at the managrind tournament decklist that are posted here on hearthpwn. They have alot of great ideas and you get some kind of insight into the meta. Also look at the forums and streams. Also learn how to crop :]

Harvest Golem Summons a 1/1
Nat PagleDraws one card every 2 turns at the start of the players turn. First card fished up comes at the first turn it is the players turn again.

It seems like a very good beginner deck. Obvious changes is to add Lightning Storm, Lightning Bolt, and Rockbiter Weapon. Then you can work on some legendary cards such as Leeroy Jenkins, Ragnaros the Firelord, Sylvanas Windrunner, Cairne Bloodhoof, or just any card that seems good to you. (my first craft was Malygos because he seemed fun and unique)

I don't think that two Windfury are really necessary. You can get another Defender of Argus for that.
Rockbiter Weapon is an amazing card for shamans, especially with one or two Windfury and Gadgetzan Auctioneer.
Also I think you can drop the Unbound Elemental for one Harvest Golem, and maybe even drop one Chillwind Yeti for one too if you lack early game.
Vs. rush warriors I have found if you control the board hard time, you usually win because he has no card draw.
Other than that it's basicly hearth of the cards :)
