No, it wouldn't because any armor you gain above the required amount won't spill over to the next upgrade. Which means you need to gain 3 or more armor twice in order to fully upgrade the spellstone.
That's because the images for the upgraded versions weren't shown. Hearthpwn is just using the same image as the lesser spellstone until the upgraded versions are shown.
I think this is an important point to keep in mind. Does the opponent know which Deathrattle you copied? I know Unearthed Raptor says which minion's Deathrattle it copied if you hover over the card, but I'm wondering if this time they'll keep it hidden because it is copying from the deck rather than the battlefield.
The problem with your idea is that no one would run it because it would just be a River Crocolisk. I wouldn't run a 2 mana 2/3 just to slightly increase my odds in a Joust.
I think a better approach might be to make more early game spells that summon minions. That way you can still fight for the board in the early game while having better odds winning Jousts because of your late game minions.

This card is also a counter to the Raza Priest deck because it shuffles three identical cards into your opponent's deck.

If you combo this with Murmuring Elemental then you can shuffle 6 candles into the opponent's deck and they only need to draw 3 to summon him.
