they already did something like that: originally the "win 2/5 games with <class X> or <class Y>" quests were just "win 2/5 games with <class X>", so now it's kinda like discover because you can choose with which class you can do the quest (but can also do some wins with 1 class ans some with the other)
Everyone would just pick out the good quests like total dominance and watch and learn, everyone would prefer a discover mechanic but there's no need for it. If this would be implemented some quests would very rarely get picked and - as I mentioned before - everyone would go for the good quests (especially looking at you watch and learn). I think the current quest mechanic is good, because I sometimes get forced to play a class I rarely play at all and, arguably, that's a good thing. You said that you see this as an improvement for new players, I don't. This increases the odds of them sticking to one class while it's best if they discover them all, known them all, and perhaps even play them all.

A lot of people already do select the quests, by rerolling all the 40g quests and ignoring them until you can either turn them into 50g or more or you are forced to complete them because you have your quest log full. No one except new players wants 40g quests. So a discover mechanic would actually help both. New players get easier quests, experienced players get quests that are more profitable.
One discover per day, no reroll. System should be balanced then.

I like the concept but it is nice to play a class you wouldn't usually play every so often, also some quests are worth much more gold than others, people would just pick the higher gold giving quests.

And why that's so wrong? That's actually the best thing a new player can do.
No, the best thing a new player can do is explore all the classes, see what they're about, get to know them all, and perhaps then pick a favourite. Maybe even play several classes. Ofcourse, it's good for a new player to mainly focus on one class, but you need to know your opponents as well.
To be fair they really need to update the gold gain system in general.
just compare it to something like spellweaver: You get 6 quests a day. You get gold playing against AI. You get half as much gold for lost games. Longer games yield more gold. There is no cap on max gold per day.... etc.
It is really embarrassing if you compare the 2 how little HS actually gives you.

Discover mechanic for Daily Quests (choose from three different randomly selected quests), it would be great, especially for new players.

The odds would have to been (re)rigged, mainly the odds of Total Dominance and that spectate guest should be divided by 3.
