So I'm a relatively new player to Hearthstone in the since that I recently got into it after taking a break (started around The Grand Tournament release and picked it back up a month ago), and am working on trying to construct a deck for the eventual goal of legend rank. Yesterday I was lucky enough to get a double legend pack with a golden Wilfred Fizzlebang and Acidmaw which I intend to disenchant. I've looked around but haven't been able to find a post-Old Gods crafting guide anywhere. My question is-
What are some of the best cards to enchant in general to boost your decks?
I play mostly Standard mode so those cards are preferred. Also I already crafted Twin Emperor Vek'lor and have The Black Knight, but that's largely it. I can disenchant King Krush and Gah'zrilla in order to make more cards if you think that's a good idea.

Twin Veklor is a great card for C'Thun decks, it really depends what class you preferably play though. if you could tell me that I would be able to help you. btw awesome pack!

Well if you wanna play control decks I would definitely recommend crafting Sylvanas for starters! And it really comes down to if you want to play control paladin, control warrior, or priest as those are the biggest control decks atm.

I've been meaning to make a control Priest. Also I'll probably craft a Sylvanas but want to wait and hear from other people.
Since you have already crafted Twin Emperor Vek'lor go with C'Thun decks. However, they are not always strong nor fun after 50-100 games. So try to mix it up with other gods if possible.
C'Thun control Warrior is solid, and so is C'Thun Druid. C'Thun Priest not so much. Other C'Thun decks aren't great. No idea about C'Thun Renolock.
Best cards to craft:
Craft the C'Thun buff cards if you are missing any. Ignore this if you plan to open packs with gold later.
Sylvanas Windrunner is one of the best card and can be played across any type of decks.
Druid - none of those class legendary cards are going to help you much. Epic like Ancient of War still sees some play. Since Druid doesn't have board clearance, you will be depending on heavy taunts.
Priest - again, same like Druid, none of the class legendaries are must have. Only one epic card you will need. Cabal Shadow Priest. Even that is not been great lately, still very good for control games.

The point of constructed is to use the best cards for a specific deck. Just slapping together cards that are good in a vacuum doesn't get you anywhere. I sound like a broken record but this really needs to sink in with every newbie, again and again...
For example, look at Freeze Mage. On their own, most of the cards are subpar. Frost Nova doesn't do anything, it stalls a turn but then you still need to kill those minions. Doomsayer doesn't do anything, the opponent just trades his board into him. For a good reason, both cards are bottom tier in arena. ... Now play them together.

if you've already crafted Twin Emperor Vek'lor, obviously you should play C'Thun decks right ?
the viable class usually : Warrior-Druid-Priest
you could look for the guide there... :)

I'd go some classic legendary's like Sylvanas Windrunner, Ragnaros the Firelord or Harrison Jones.
Or as sal_Bre said above Tirion Fordring, Grommash Hellscream, Archmage Antonidas and Lord Jaraxxus are all great choices if you want to play those classes.
