It's probably the highest skill cap priest deck and priest is generally a higher skill class. It's not a deck you're going to just play well against good people/decks the first few games. People have been rank 1 legend with this deck many times and it was one of the most brought decks to the recent HCT. I don't see how that can be overrated. There is a bit of lowroll and highroll to the deck but it is incredibly flexible you just have to know how to pilot it, and it isn't always obvious.
You have to not only adapt to what your opponent is playing but to your own hand. The minions you draw is going to decide your win condition. If you draw Velen and/or Malygos, then you probably won't be using cloning gallery for an OTK, so you need a spellstone. Don't use shadow visions unless you truly know what you want unless you're against aggro for mana efficiency. You don't win every single game with mind blasts, value from LK, Lyra, and the value of the resurrects themselves can win attributional games. There are a lot of plays that you wouldn't really think to do when you start the deck like gargoyle on 3 and then resurrecting it on 4 for another coin so you can play a big card sooner. But that isn't always the play. It's a very swingy deck. Often times you'll just hero power and pass even in the late game, but then you'll swing the whole board the next turn.
You mentioned odd warrior. That isn't a great matchup but it's far from unwinnable. In that kind of match you want to get as many spellstones and resurrect cards as possible. Bursting them is an option if you can make a perfect spellstone with a lot of burst. But you can win by just resurrecting big dudes over and over.
There are also better versions of the deck for different metas. Some run only the combo minions + zilliax and plays like a combo deck. The deck with Lyra and LK can very often win on just value. In an aggro meta you want Grizzley over shadow essence, where as essence is better in a slower meta.

i think this deck is just overrated trash.
Mass hysteria is not high value at all in that matchup, it's actually pretty useless and you have two of them, using one is clearly better than burning what could be an important, or just playable, card. Anduin is actually quite strong just for dropping some chip damage in that matchup, especially when you get Velen going.

Against any deck other than Warrior and super slow control mage variants, your winratio relies solely on what you draw. If you draw or otk against slower decks (that can actually kill you), you can concede.If you do not draw and play and early taunt against aggro to revive it, you can concede. And yes i have played the deck in legend ranks before two seasons ago, so i am not talking out of my arse here.
I play a gallery deck that doesnt even have mindblast/maly/velen/inner fire and usually win. That facts youre scrubbing it with unfair derpblast or innerfire garbage and getting rekt is an absolute delight

I honestly think you're not playing it right. In your example screenshot you say you "burned" Velen. That statement in itself demonstrates a lack of understanding of the deck. You almost want velen and malygos to die so you can res them and combo with the spare mana. Sure it's nice when the cloning gallery pulls Velen, Maly, 2 elementals and lets you OTK but that's just one of the ways the deck can play out. The other is getting huge value from Lyra and coins or the continued pressure of ressing big boi's.
There will always be games when you get a duff draw, but maybe watch some videos and see how other people pilot the deck. It's dead at rotation anyway (for standard) so alternatively cut your losses and try a new style of deck which might make it past the rotation.
The decks is really hard to master, i always hit legend and also get pretty high ranked, and i also lost most games with this deck until i had played 30+ games with it. I would recommend you starting playing the "many" minion version first with taunts. Use the list below. As some people pointed out u have alot of ways to win with this.
Against warrior its about getting a huge burst turn or outvalueing him, if u pick up a single spellstone with visions, u get alot.
Against aggro u need ziliax or giizzlies, res spells and boardclears, its alittle unfavored vs alot of aggro decks but not alot and u can win these.
In every match u to think alot, always ask yourself how do i win this match and always have a plan how to do so, dont just play the reaction game 1 turn at a time. U need to plan ahead all the time with this deck.
Also alot of people have told u that Lyra is the way to win, i dont think u often should go all in with lyra, for me lyra is just a taunt on turn 5 and maybe i can get some resources from her later, but she is never part of my winning plan, unless i can see that i would lose if i didnt get specific random cards.

You need to lose a card. Best thing is Holy Smite, because you can Voin+Velen next turn.
Some general tips:
Try to hold out on boardclears as much as possible. Especially with healing in hand. Attacking a full board with Velen + Spirit Lash heals you back to 30.
Don't spoil your Ressurrection pool if you don't have to.
Two solid ressurrection turns are better than half ones. Try to max out your spellstones.
Keep your eyes open for other opportunities to win. I've found f.e. Seance or Mind Control from Lyra, took an opposing minion and won that way.
Not sure if it's in your deck, but Vivid Nightmares can be surprisingly good against certain decks (depending on the meta that day).

How can a deck where you're often going "I hope I topdeck removal" or "I hope I draw my one and only 5-drop" or "I have a 20% chance to get the right removal from Shadow Visions or else I lose the game" be good?

Depends on where you are on the ladder. 5-1? Probably way too much hyper aggro for this deck to be a good pick. Especially if you're not good with it.
Legend? Perfectly reasonable.

I didn't play ladder in February. This deck loses big time to anything that revolves around "play minions on curve."

Like Gimpusoid said, the game plays out very differently every match (at least for me) which is exactly why it's a high skill-cap deck.
I lost a lot in the beginning as well but eventually it clicked for me and I have a high winrate with it now.

I'm giving up on this deck. I fail to see how a deck that doesn't do anything for 7 or 8 turns could possibly be playable.
