OK. You could try looking for some Budget Priest lists. They don't have to be bad, and indeed some can be quite competitive. Do you have Whizbang the Wonderful? If not I'd suggest crafting him as soon as possible.
He will give you access to cards that you don't have and decks that you might never play by giving you a Random Deck Recipe Deck every game.
Here's a Budget Preist list you could try. Obviously you can switch cards out. It's not great but solid and cheap.

As for Arena I don't think I can help dude. I suck at Arena! As much as I don't like him, you could watch some Kripparian videos on YouTube. He is without doubt one of the best Arena players out there. Just expect Salt. Lots of it... 😂

Now we're in a world where 4-mana 8/8 with no downside is totally fine.
There is a downside. Kind of. You have to not play anything for 4 Turns and against Aggro that means you've already lost. Your Ping cannot keep up.
Also I really hope Blizzard don't listen to these whining complaints. Because it's not just Mountain Giant that you guys want to move. If Blizzard HoF it then an entire Archetype goes away. Why?
Every Class has some form of answer by Turn 4-5. And if the Mage doesn't draw thier Mountain Giants then it's an even harder game.
This is difficult for us to do if you don't let us know what kind of decks you want to build, what cards you have, what cards you are missing, what packs you've bought/will buy etc.
If you could give us some sort of guide I'm sure there are people here that can help you.
During MSoG I pulled a Golden Don Han'Cho from 15 Packs. Not being interested in that particular mechanic I dusted him and was going to sit on that Dust for a while whilst the Meta settled.
Next day I bought another 15 packs. You know where this is going don't you? Yup. Four packs in, another Golden Don Han'Cho.
Sure it is not as strong as it used to be but still pretty decent.
Silence Priest, Rezz Priest, Miracle-Nomi Priest, Wall Priest, hell even saw a Shadow Priest - sure no T1 decks but some of them are good enough to ladder.
Just keep on trying ;) - but Priest is defenitely not dead !
Yeah. I've been playing Shadow Priest a little bit at Rank 17. It catches people off guard. Especially Archmage Vargoth into Shadowform.
Ideally you want to get your opponent as low as possible then Alexstrasza thier face, double Mind Blast next turn and Ping then finish them the turn after.
Personally I find my Rank Celling around 10. That's mostly due to time but also some other factors, such as misplays and bad mulligans on my side of the board.
I get it Kaladin, I do. But as I said, it just leaves me cold and bored. I know I'm in a minority of people that would rather watch American Horror Story, Ozark or Black Mirror.
I admit I haven't read the books, although I have them on my Kindle. The problem is I have around 800 books on my Kindle and only a limited amount of time.
Maybe if I read the books I'll find a greater appreciation of the Series. Let's be honest here, 10's of Millions of fans can't all be wrong. Right? 🤔

There's a few things. The language used is archaic and comes across as odd to me. I get that it's a Fantasy Epic and all that, but it seems to me to be attempting a cross between Shakespeare and Boyz N The Hood. Most strange.
Then there's the fact that none of the characters gripped me. After a couple of hours of watching any show you should have at least some idea of favourites or characters that you want to see die in a cloud of body parts. I felt none of that.
GoT just leaves me cold and lifeless. I get why people like it, no, love it. I do. But it's just not for me I guess.
Although I do enjoy the Compilation video on YouTube of all the best deaths. And I like the soundtrack.

And I've been playing Eternal on and off for 2 years. Dire Wolf have had to Nerf a lot of things just to get some semblance of balance but it's still crazy.

I play double Divine Hymn and a single Squashling as my heal post Shadowform as well as the obligatory Zilliax.
It's a fun deck to be sure.
Edit: The deck I posted earlier has been modified, dropping a Wild Pyromancer for Zilliax

I've tried to like it, I really have. It's got Violence, Dragons, Intrigue, Nudity, Booze and Midgets. Everything I love about life.
And yet.... I bought into the hype, purchased Seasons 1-5 on BluRay, settled in got halfway through Season 1 Episode 3 and had to turn it off.
I hate it. All of it. And it's killing me. I should love it, I should be waiting in anticipation for the finale. And I'm not.
Please. Someone help me.

The fact is that as much as you seem to laud it, MTGA has flaws and WoTC want your money just as much as Blizzard.
