After thinking about it, this deck is an 8-card deck, so you will draw ALL you need by Turn 8, even if your starting hand has only 1 minion after you draw on Turn 1. If you are willing to restart low or no-minion draws, I would consider adding some combination of Tar Creepers, Mistress of Mixtures, Life Drinkers, Refreshment Vendors, Shroom Brewers. That way you can have plays on Turn 3 and 4 that save health. I'm not sure if it's better to bet on a slow draw from LK or restarting spell-heavy draws and hoping to curve out.
My experience:
Save Zilliax for a monster Pogo and get back to 30.
Survive to turn 5, where you play Rotten Applebaum. If LK AMS's on 4 or just has too wide of a board, restart.Play Shark on 6, since it's stealthed, then play Giggling on 7. If you can't get this, you probably won't win, from what I saw. On your Turn 7, you'll have created 8 hits of taunt(with Shark and Giggling), on LK's turn 7, he'll hit 1, then on his turn 8, he'll clear. That gives you your turn 8 and 9 to create some craziness, with Shark up. On your turn 9, he'll have a board of 2/5's and his weapon. So, if you can make a gigantic Pogo and magnetize Zilliax, you should easily get back to 30.
Try to Recruiter the Giggling, which worked for me since the game played out this way, and have 3-4 1/2 Taunts with Divine Shield. Also, LK didn't play Blizzard, so he either didn't draw it, or the Annoy-o's prevented it. Every time I had Pogos for days, he kept freezing my board, but I also didn't save Zilliax for the life reset.
Recruiting a Recuiter is tough but your YMMV. I think Recruiter, with Shark, on a Giggling & Pogo gave me enough draw and defense to win and Recruiter on a Pogo with Shark. LK's Stage 3 Hero Power will kill you before any sort of fatigue will after shuffling 12 copies of cards into your deck. -

Spent too much money on making a few decks and started playing this and really loving it. Got to rank 8 with my bomb warrior and murloc Shaman deck then hit a lull and dropped all the way to 11. Built this and have been having a hell of a time palying it and got back to 8! Are there any easy 1-1 substitutions that you can recommend that add some power? Or is this pretty much as optimized as you could make it even if you could include some epics or Legends?

Awesome input, thanks, kind stranger! Let me address some of your points down below as I recently overhauled my Guide on Pogo-Hopper Rogue.
I've actually tried it! From your list, the Tar Creeper performed the best, especially if drawn in time. Also props to the Lifedrinker as it is a good card, but the main issue with the cards mentioned is that they are only healing yourself. The healing effect is good, but it's not enough. 1x Mistress of Mixtures and a 1x Shroom Brewers might not do much harm, but if we don't draw our main Taunt minions in good time, we will get overwhelmed by the Lich King. I can suggest dropping Khartut Defender for the Shroom Brewer or Tar Creeper, although it slightly depends on your playstyle. I'm much more comfortable forfeiting my early game because I know I will make a wild comeback during Stage 3 and close the game with the big 21/21 bunnies.
If you don't need Zilliax any sooner, it's a good strat mate!
If I draw Spirit of the Shark and Giggling Inventor in time, I'm comfortable dealing with his big board during Stage 3.
This is an insane synergy I found later in my playtests. Since I included 2 copies of Giggling Inventor, there's absolutely no reason for me to Lab Recruiter her anymore! My big Pogo-Hoppers can take care of the rest.
I've also included this in the guide as it's really constructive
After more trials, Recruiter on a Recruiter started to feel lacklustre, and it didn't offer me the results I've always wanted; so you were right. Glad that finally you succeeded and won your Rogue game!

LK's T5: Skeletal Knight + Anti-Magic Shell
My T6: Adaptation my minion --> Divine Shield, Taunt or Poisonous. I play Equality. Truesilver Champion his Skeletal Knight. Both hits go face. 6/1
LK's T6: Grim Necromancer + HP
My T7: Blessed Champion on my Young Dragonhawk. Both hits face and I win the game. 12/1
