regarding your content, you have to do what you enjoy the most, to be more authentic. when you are the kind of dude telling a lot of jokes and what not, make some funny highlights about your games, but if you are more the coaching type of guy, then do some instructional videos.

As a disproof of 3/27 (given the assumption that you can receive the same card twice).
1 / 27 * 3 = 3 / 27
If you are given 27 cards, you are not guaranteed to receive 1 of the card you have selected.
1 / 27 * 27 = 27 / 27 = 1.
This would mean that receiving the card is guaranteed, but you can easily envision sets of 27 cards that do not contain the one you desire.
What has been done is you have calculated the EXPECTED number of times the given card will appear, not the probability that it will appear.
Now if we operate under the idea that you cannot receive the same card in a Discover the math changes a bit, but the methodology remains the same.
1 - (26 / 27) * (25 / 26) * (24 / 25) = 1 - (24 / 27) = 1 - (8 / 9) = 1/9 ~= .111111 = 11.1111%For each card you receive that is not the wanted card, the pool of cards is reduced by one. Again you multiply the probabilities of not receiving the card together and subtract from one.
Under this assumption, the method of multiplying the number of cards seen by the probability of a given set of cards is a viable option.

I'd go Archmage. Moonfire is complete junk in Arena, and Naturalize is too dangerous since you actually give your opponent cards. Arena is the most likely place to have topdeck wars, and I'd rather have a big body with an ability that might never be truly realized over hard removal with a serious drawback for Arena.

Don't DE. You never know what great synergy he may have in future expansions, kinda like Southsea Deckhand and Oil Rogue when GvG came out. Obviously different level of card, but still.
Plus, he's just so dang awesome when he's swatting insects!

It just takes a ton of time. Realize that many of those streamers are full-time streamers, so they ladder up for 8-10 hours a day sometimes. Also, they've been playing a long time and have learned the little quirks about different decks you play against, different styles, and the fine art of how to trade properly.
Unless you play a pure aggro deck, it's also necessary to know what cards are generally run in every common meta deck so that you know what to play around. Most midrange or control legends play as if their opponents have the perfect counter cards to each situation in hand.
Ultimately, just lots of time! To practice, watch some vids of legend streamers on YouTube and pause before each turn, say what you'd do there, and then see what they do. StrifeCro, Savjz, Trump, and Kolento are the ones I usually learn from the most.

Twice now I've received a Dust Devil twice from opponents' Hungry Hungry Dragons, one incident which resulted in my opponent playing Lightbomb to stop it!
Solid card, very interesting, also has been serving me incredibly well in my double Hungry Dragon double Mind Control Tech Mage deck!

Recombobulator works best on cards with strong battlecries that cause a drop in their stats.
Take any card with a strong battlecry but terrible stats for the cost (Antique Healbot, Defender of Argus, Rend Blackhand, Ancient of Lore, Bomb Lobber, Arathi Weaponsmith, an extra Grim Patron) and compare it with the possible recombobulations it may get for its mana cost.
I should add that I used to run a Paladin deck with 2 Healbots and a Recombobulator. I won a few games by dropping it and then transforming it into a Doomguard with no downside!
