Demon Berserker: while decent in stats, it is too situational to be too useful. In a comparison case, it is a better drop than Floating Watcher on turn 5. Ultimately, however, it is just a +1/+1 Frostwolf Warlord that requires Demons instead of any minion. Therefore, it isn't that good. But it is only decent. Instead, you could do +2/+2 or +2/+1. It also lacks the drawback that all non-Legendary Demon minions have. This one has none therefore there's no actual "Demon" flavor to it.
...HOWEVER, if the effect includes himself meaning when you play him and he becomes a 6/6? Then he's OP. The effect would need to be, "Gain +1/+1 for every other Demon on the board."
Brewer of Souls: Wow, that is the most OP card I've ever seen lol. It happens at the end of each turn too! LOL! Its effect needs to be nerfed to, "At the end of your turn, transform another random minion into a 1/1 Wisp." so it includes your stuff and even then that's still kinda OP. You could make it into (6) Mana 5/5 with the effect I suggested as well.
Ethereal Chains: This is an interesting card. I like the concept overall. However, if it is including your opponent's turn, when he plays minions, thus making him unable to effectively trade, or do anything to your board, then it's really OP.
Here's what you can do with this card. You can make it into a (3) Mana card with the effect, "Your opponent's minions have 0 Attack this turn." OR retaining its (5) Mana cost and be, "Your opponent's minions have 1 Attack until the start of your next turn."
Underlord: So... It destroys itself if it's the only minion on the board? Lol. I'm not sure if the card is even balanced, even if it was, "Destroy another random minion." The art you got for the card though is really nice.
Elemental Dragon: I like the card effect. It's a reasonably costed card. I'm not sure if it should belong to a dragon, much less an "Elemental Dragon." Shouldn't it like involve the elements or something? I don't know. If you wanted to use a dragon, then use an armored dragon and call it something like Iron Drake or something.

Demon Berserker is decent and I feel that it is balanced as it is.
Brewer of Souls while its effect can be overwhelming, the 6/6 stats are quite low and is in range for practically any type of hard removal (all except for Big Game Hunter) like Fireball or Polymorph and will be instantly silenced. Although while compared to a Polymorph, the 6/6 body is quite strong so I'll think about lowering its stats and mana cost.
I think of it like this: It is a Frost Nova is pretty much Ethereal Chains except that trading is easier. At 5 mana, Brawl is also a good removal card with added bonus that you don't need friendly minions on the board. With this card, you would need it so that you would need minions on the board beforehand. This card is useless removal if behind, decent if ahead, and great if the game is close.

Well, Demon Berserker is NOT balanced if it becomes a 6/6 when you play it by itself. Lol. That would be a power creep and way better than all current 5 Mana cards stat-wise and effect-wise.
I suggested the reduction in Mana cost and stats for Brewer of Souls, because first off, it's too slow at (8), so it also kinda sucks but it's also incredibly OP when your opponent has no minions. While it is situational, it's still stupidly OP because it effectively denies your opponent of playing any big minion. That's not really good design especially when you only think about only one class's removal. Mages are specialized in removal.
It's also just a very good card in Arena, so good, that it's stupid. Should just concede as soon as you see it lol. It is a "win-more card" in essence the way it is. 5/5 for (6) or (7) Mana isn't that bad imo with the changed effect I suggested, I feel. It feels like it would be something Blizzard makes too--- what with the drawback that is.
Well, with Ethereal Chains, your opponent's minions just go unopposed though, so that's why I suggested a lower Mana Cost with at least 1 Attack, so it's something like an Equality but not really. It could also be (3) Mana with my suggestion too. Nonetheless, I love your card ideas. I hope you'll make more. :)
Demon Berserker: Really not sure if this is OP or not. I think you should lower the health by 1 because a 5/5 for 5 is almost vanilla stats, + it's a demon itself + in a demon lock deck, its so easy to get an 8/8 with this.
Brewer of Souls: In constructed this card sucks. It's too slow and is useless against the aggro meta of today. In arena, this card is OP as Hell. In fact, if your winning, or if the board is about even, then congrats your opponent just loses now since he can't play anything without it becoming a wisp. There isn't guaranteed removal or silence in arena, so there would be nothing your opponent could do. Perhaps lower the health to 2 so the wisp/ hero power can actually do something against this and lower the cost to 7 or so.
Erethral Chains: Interesting card, not sure if this is good or not. I guess it's powerful against aggro and somewhat good against control.
All the rest cannot be defined as good or not until we see how people would work these into decks.
http://www.hearthcards.net/ - Great way to make your own cards
Changes: 12/29 8:46 PST - Brewer of Souls will now cost 9 mana instead of 8 with 5 attack instead of 6.
Changes: 12/29 8:47 PST - For clarification reasons, the text will read, "Enemy minions have 0 attack until the start of your turn."
Changes: 12/29 8:48 PM PST - The card will now destroy ANOTHER random minion. It cannot kill itself guys.
Changes: 12/31 1:24 PM PST - Card remade!
Changes: 12/29 8:48 PST - Changed to 6 attack from 8 and the text is no longer a Battlecry
I like Brewer of Souls looks great for a kind of Priest control.
...OuO...
Thank you :)
