Idk where to start, a lot of the decks on this site for Paladin are outdated or very low budget....I can do a mid range paladin deck. I have Deathwing and Windrunner as my legendary cards.
I've got a mid-game controllish Pally deck and I run Harrison Jones, (I admit, partly because he's gold), and Hogger. Harrison humbles Jaraxxus, (and overflows my hand XD), and Hogger often keeps an opponent from reestablishing a meaningful board presence in the late mid to late game. I often use BoK and/or Divine Shield to protect the Hogster. Those are also the only two legendaries I've got, (pulled from packs), so yeah, they're not necessarily ideal, but they do work pretty damn well.
I'm nowhere near the top ranks, but I do decently enough, and the cards I'm still lacking will come.
FWIW, and I am nowhere near top ranks either, but so far in my experience, the epic neutral Faceless Manipulator is a fantastic card to have and one that is relatively simple to get/craft. Ysera and Ragnaros have both worked out great in my control deck, for different reasons. Ysera has low attack but very high health, and gives you a special card at the end of each turn. A couple of these cards are OMGWTFROFLPWN -- there's one called "Ysera Awakens" which is basically a board-wide nuclear blast and has won me a couple of games; so even if Ysera gets immediately killed or silenced after dropping her it's worth the gamble, IMO. And Rags is, well, Rags. You have to be careful about putting him down in front of a priest, but other than that, he's just hilarious -- especially if you get to drop him on a topdecking mage. Veev's deck is almost exactly what I'm running. I don't have sylvanas tho, so it's a little different. Pretty much the "core" pally cards, with every good legendary thrown in.

I'm in the same boat as you sir. I want to get back into pally because I think it's a fun class but there is very limited recent activity on them.
You pretty much need every major legendary (6-7) as Paladin to be competitive at the highest level, so you sort of answered your own question.
It's not a bad class, but not particularly dominant right now either. Definitely can get you close to the top, though.
