Beast hunter was relevant for a very short period of time back when Barrens was released and pretty swiftly faded into meta irrelevancy (Didn't see any at all after the mini set was released and I was playing at like 100-300 legend at the time). However, and this may have slipped under the nose of quite a few of you, it actually received good support in the most recent set, and also got buffed in the most recent patch.
For starters, Devouring Swarm is an AMAZING card that adds so much to this deck. Removal, card advantage, extra reach on otk turns; the card provides it all. Leatherworking kit is also a great card that improves your consistency by a lot. Only having 4 good draw cards really hurt you because you would often get games where you wouldn't see them. And now at 1 it's actually reasonable to run. It was still good at 2 but it felt clunky to ever play it. You basically just had to burn a turn for nothing. At 1 you can drop it turn 1 if you lack a one drop and not feel that bad or just reasonably slide it into any other turn. This deck tends to have the opposite problem of most hunter decks; you actually have TOO MUCH draw. The last new card I'm running is Rat King. Many people will scoff at this but in a meta where pirate warrior is either the best or one of the best decks then rat king is always going to be solid. That deck often has wayy more steam than you anticipate so a 5/5 rusher that keeps coming back is really relevant. Admittedly, it is the most replaceable card though. I haven't given a lot of testing to substitutes but, most likely, your best bets are going to be timber wolf if you're seeing a lot of combo or Rats of Extraordinary Size if you're seeing a lot of control. Rust rot viper is easy to slot in as well if you don't like either of those options.
The goal of the deck is quite simple: apply early aggression with well statted cheap beasts (1 cost into razormaw is a very common curve I aim for especially if I know I won't be able to trade and get a hyena online), use your amazing card draw tools to refill, and then buff your entire hand with don't feed the animals and go for the finish with a combination of tundra rhino and any amount of penguins, reduced to 0 creepers, and whatever else you can afford (particularly hyena gives you a crazy amount of reach on turn 7 if you already had a few 1/1s from the turn before or wolpertinger being a lot of damage for mana spent).
You have AMAZING matchups into board based decks. In my experience in the new patch so far, you farm pirate warrior, evenlock, and paladin, but you can pretty much extend this to any deck that needs to win through the board you can think of. I've also been mostly beating renolocks, of which I have seen a little bit of. Your worst matchups tend to be combo decks. Things like ignite mage, pillager rogue, quest hunter, and alignment druids. Ignite mage lists are suprisingly somewhat beatable just because they run minions to trade into. Still unfavored but they need to have the combo on 6 or you can pull through. I have not seen any pillager rogue recently luckily for us as it's a pretty hopeless matchup. Your one hope is poison dreadscale in response to them dropping spirit of the shark on four to try and stall for 1-3 more turns. Quest hunter and alignment druid are the most hopeless. Leatherworking kit helps a lot into quest hunter as it's way easier to fit in time to play it now and you can try to recover from them constantly clearing your board. Alignment druid is really poor. The only way you possibly win this matchup is if you do something crazy like tempo out a rhino and they just spreading plague pass. Shadow priest is a little unfavored because they tend to kill you from 15 without any minions on the board (also shadowcloth needle really hurts you if they start playing it again). However, early hyena plays can make any aggro matchup completely winnable. Most aggro decks have trouble clearing a 6/4 on 2 that continues to grow.
The TLDR mulligan guide is keep alley cat, wolpertinger, and buzzard always. If you have a 1 drop already, hyena, razormaw, and master's call are all good keeps.

At the time of my comment, it was alignment druid and quest hunter which basically farm this deck. Although, I will admit a lot of players seem to be playing pirate warrior.
According to the tempostorm snapshot and also my own experience at top legend alignment druid was and is not one of the top decks. I mean I did climb it to #25 legend. Even looking at the stats on hsreplay; pirate warrior, quest hunter, and evenlock varients are still the best performing decks as of 15 hours ago.
Evenlock and pirate warrior are still insanely popular as well and were even more popular when I was climbing with the deck. The popularity of quest hunter hurts the deck a lot but I'm not claiming the deck is insane or anything, just good enough to climb to top legend. A fair tier 2 or 3 imho.
If you doubt me that much then just give it a shot. Once you get the hang of it getting to legend is a breeze even with the popularity of quest hunter. I had to switch decks just to prevent myself from hitting legend too soon lol.
The tempostorm snapshot is terrible lmao. But since we're aiming to climb, popularity takes priority and I respect your stats.
But what if we choose to ignore stuff that other people told us were true and try to think ourselves; what actually beat(s) alignment druid and quest hunter? From my experience, quest hunter only loses to alignment druid and perhaps some warlocks when they drew perfectly. Maybe pillager rogue as well. The recently faster version of pirate warrior seems to also have a decent match-up against it. Alignment druid beat pretty much everydeck that doesn't kill it in 7 turns and doesn't use disruption, which at the time was actually pretty scarce.
Anyone can play a top tier deck to rank #25 and then snap a pic, create some random deck and call it top #25. I wanna know what makes this deck a top #25 deck, because I'm not seeing it. I'm not seeing anything that grants it a chance against the top tiers. If wild wasn't an extremely toxic experience where everybody just spams the best deck, then sure, this could easily be a top #25 deck, but sadly, that's not the reality.
I like the idea, but the truth of the matter is, this is just a 50/50 deck. Feel free to convince me otherwise.
The wild snapshot is quite solid, dude. All of the players that contribute to it are well known and well respected in the community. They miss some things but for the most part it is a pretty nice resource to make use of.
I mean no where am I denying that these are poor matchups lmao. I understand they are poor but when I was climbing, I was rarely seeing alignment druids on ladder. They picked up popularity in the last week or so of the season. If you want an honest answer though, the best decks against quest hunter are stuff like glarelock, questline druid which I've seen a recent small resurgence of, pirate warrior as you said, and shadow priest. Decks like big priest, cutelock, and discolock are also winning vs. it but they are very rare. Celestial druids are in a pretty good spot but not unbeatable by any means. Does pretty well into the tippy top of decks but has a tendency to get outcomboed and is losing vs. quest hunter.
I mean I have a lot of pictures of wins ranging from 120-25 (the range I climbed) with the deckif you really need to see them but I don't know why you're being so doubtful about this lmao. The deck farms a lot of the better decks in the game right now. You can pick 2 random ones it loses to but it also has some really nice and more popular matchups like pirate warrior and evenlock. Try the deck out or even go watch some of the streamers who have tried it (like corbett and getmeowth). Beast hunter is nearly at a critical mass of good support. Buzzard and rhino are crazy cards. You have these really strong synergies you talk about. The deck absolutely farms the board based decks that make up most of the meta game.
Imagine you make a cool and unique deck, get really good with it, climb it to 25 legend, decide to share it with the world and you get people like you commenting on it. Speaking of extremely toxic experiences.
It sounds like you don't know the actual match-ups for the best decks, but leave that be.

I have literally been playing against these top decks over and over again. Everything I said there is my own experience combined with stats. You are sitting here literally telling me to ignore people lmao. Alignment druid is not the best deck in the meta. Evenlock and Pirate warrior (two great matchups for me) out perform it by a large margin.

Any sub for Dreadscale?
There is no card that fills the same functionality or is equally as good, but you can just throw in a rust rot viper or timberwolf as reasonably playable cards. Alternatively if you start seeing any control Rats of extraordinary size could be a decent pick if you like
if you want to try your hand at climbing this to legend or climbing in legend dreadscale is really necessary though. Just a fair warning
i also dont gave dread sale and had unseal the vault lying around that I feel fits perfectly.
You’re free to play it but trying to complete that quest slows the deck down by a lot, and a smaller starting hand also hurts you.
