A 5/6 taunt is worth exactly 5 mana, and you get a slight bonus in the form of Sunken Sentinel. However, it's really just not enough of a payoff, and between rounding up to 6/10 and down to 5/10, I'm inclined to just keep it at 5/10 to emphasize that this should not be the reason you're building a dredge deck.
