Also no need to wait and see anything... Ypu can see it right now in eurogamer article which revealed it they have a video. In that video they got 3 mana version of choice cards of mark of nature.
Check the video, the cards in hand get the same mana cost as the original Choose One card.

The other thing to think about is, if they are indeed separated cards, then the shuffle half of jade idol will likely just shuffle pointless cards that shuffle more cards, as opposed to shuffling more jade idols

No you don't. The choices will cost 1 mana in your hand. Just like in this video with Mark of Nature, the choices that go back to your hand cost 3 mana each instead of 0 like they appear initially https://www.youtube.com/watch?v=aUT6AX--JE8
so in your logic, you get 0 mana starfall :O or norusih, ez 4 mana crystal and 3 cards

So its a 2 mana 2/3 with "taunt" in that your opponent needs to kill it, but the only cards you can play with this (currently) are Wrath and... no just Wrath
There is a card draw aspect to it as well... I feel like it is good if there were / are just more choose one spells that you want to play.
Pretty safe to assume they're gonna add more Choose One cards this expansion.

When you switch it to Wild, there isn't much Choose One spells since the game release. With the card reveal above, it is very likely Druid will receive more Choose One spells in the coming expansion. Hopefully, something in the 2 or 5 mana drop. The Druid class is currently lacking good cards in those slots.
From my understanding of the card effect, this means we actually get the choice cards as actual cards in hand? Eg. Jade Idol, Summon a Jade Golem and Shuffle 3 copies of Jade Idols as individual cards in hand?
Yes I think you're on the right track. You get a card saying the following:
Jade Idol Summon a (2) (2) Jade Golem.
Jade Idol Shuffle 3 copies of this card into your deck.
If there are coming more good choose one spell, then this card is pretty cool and creates value, kinda like twinspell.
Off the top of my head: Raven Idol, Jade Idol, Wrath, Feral Rage, Branching Paths (maybe), Nourish, Mark of the Loa, Mark of Nature, Mark of the Wild, Starfall and Living Roots.
The cheap cost means it most likely will see play, even if unlike Fandral it doesn't affect minions.
