I have played so many games where i have been way ahead with board presence and control when suddenly the whole board gets wiped with a couple of cards. Should i not bother putting big cards out when playing pallys, and lose for lack of board control?

That Pyro + Equality combo wipe anything on board so minion's hp is irrelevant. You have to watch out when he have lots of cards and play minimally on his board, most likely he's setting up for a board wipe.
Always try to imagine the worst thing that can happen at any given time. Against a Paladin, Turn 4 is always pivotal. That's when they gain access to Truesilver Champion, Blessing of Kings, and your current big beef - Consecration.
Here are some theoretical but likely scenarios:
It's turn 3 and you have board control with a minion out. The opponent will have 4 mana next turn. Should you play a 2 health minion? Probably not. On the other hand, 3 health minions like Amani Berserker or minions with Divine Shield turn out to usually be amazing plays on turn 3 against a Paladin.
It's turn 5 and you have a whole bunch of stuff out and a good lead. The opponent will have 6 mana next turn and hasn't played much besides dudes. Most importantly he has not played Consecration yet. Should you play more stuff? Probably not! It's likely that he's waiting for a board wipe using Equality + Consecration. Minions with Divine Shield can still be used to great effect.
It's really late in the game and you have a board lead and some stuff in hand. The opponent has one or two cards in hand. In this situation you should not play all your stuff. You already have a lead, take it easy.
It's lategame and you're behind. Play a lot of stuff as efficiently as possible. If he uses Equality his stuff will also be weakened which will help you a lot.

I think your perspective needs adjustment. There are spells and even other miinons that can kill big cards for only 1 card.
Board wipes are inevitable, either through spells, trades and other miscellaneous abilities.
You have to find balance for the situation and how many cards you should play, while holding answers to his threats.
Nozdormu wins you every game where you opponent has to go to the bathroom on turn 9.
You have to know who you're playing against and play around it.
You don't play lots of 4 hp minions before both Flamestrikes vs Mage.
You don't play lots of 2hp minions before both Consecrations are out vs Paladin.
