I always find myself sitting right around rank 10. queueing back to back between facing face noobs, or ridiculous control decks. and never quite sure what deck is quite the right fit for the meta to break through the weird middle ranks, without relying on RNGesus to deliver the wins for me.

I do believe that you have some problem accepting that you may have reach your own level of skill (ceiling of skill).

Alot of different classes with different builds. Only class who is always petty much the same is druid for me.

You might wanna try anti-aggro priest is working wonders for me :)
In the lower ranks of the ladder, where rush decks are mostly seen, Anti-Aggro Priest (or the Chinese Double LightBomb Priest for more precision) is a safe deck to ladder with. I do believe that it get unrelevant past rank 5 since you'll face more midrange/combo/control decks.

(including arena) if I play aggro, I don't get a one drop till turn 5-7 If I play a slower control/anti aggro deck, taunts, removal etc, I will under no circumstances, draw the taunt, or card draw, etc. 3 seasons ago I reached rank 6, last season I got rank 8, and this season, I've gone from, 13 down to 18, back to 10, and sitting at 12 right now. no matter how many turns I rope, how many calculations I make. if you get bad draw, in the current game that is hearthstone. you will lose. period.

Mind playing 5 games with a face hunter deck and showing how often you get a 1 drop with it if you mulligan for it? Just 5. You can literally run casual games or vs AI, wait for your starding hand, take a screenshot, then leave.
I'm not mocking. Last time I asked for something like this someone actually DID provide data showing their findings.

There's a difference between running 1-2 one drops and not drawing one and running 4+ of them and not getting any... If I run 1 Zombie chow and manage to draw it early on in a lot of games because I actually mulligan for it, I'm SURE he can manage to get some good early draws in an aggro deck...

I did make it to rank 10, without playing any face hunter, usually tempo mage, or just gimmicky stuff. right now i'm doing okay with a face paladin. usually I do not have good luck with face hunter, often find myself with abusive sergeant as a 1 drop, and knife juggler, with highmane in my hand. or related hands. and related luck.
You can just play a very standard deck to get through the middle ranks. As in, no polarized matchup set, no gimmicks. Play a deck that's as close to even against everything as you can get. Druid, Zoo, Oil Rogue, Handlock, and Control Warrior all more or less fit this prescription.
Do not play a "face noob" deck if you don't like variance, because the ladder will queue you into heal noobs whose one goal in this game is to never lose to Face Hunter. Still, I grinded until Rank 5 this season as Face Hunter, and it was just fine over that set of games.
Do not play a "ridiculous Control" deck either, because some people also like ground pound with sticky minions, which counters any Control deck that doesn't draw Shadow Madness. Again, it's about avoiding unbalanced matchups, because the only thing you get in return is cornering another matchup that you may never see in those ranks.

I think a good, reliable combo deck with a healbot or two would work well around there. Also try aggro paladin.

Try playing at rank 1/2.
You'll face 49% patron warrior and 49% zoo.
Other 2% is druid and hunter
Play handlock then and enjoy the autopilot to legend.

This metagame actually is extremely diverse. Between the 9 classes, there are about a dozen decks that you can expect to face off against regularly.
