I still consider myself a beginner even though I have been playing for about 6 months or so. Looking to build my hunter deck so any recommendations on the best expansion to go for?
I really recommend "hearthstone mathematics", an youtube channel. His videos are great, with so much info and data to help us to make betters decisions on the game.
The comment above me is correct. The Hunter DK is very important. However, if you're thinking to play Hunter long term, I recommend getting things from Witchwood and Boomsday. Not only does Boomsday have excellent Hunter cards, but these two packs aren't going to be rotating out in a couple of months. They will be much more valuable in the end.
Be aware that Ungoro, Knights of the Frozen Throne, and Kobalds and Catacombs will rotate to Wild in April of 2019. Sinking lots of gold, money, or dust in those sets may not be a good idea of someone in their first year.

So does that mean Deathstalker Rexxar will be unusable after April 2019?

It will only be able to be played in Wild mode, and that includes all the sets from the beginning of Hearthstone. Someone just starting will likely lose a lot in wild mode because they lack lots of powerful cards from earlier sets.
DO people play wild mode a lot or is most of the player base in standard?
Most play standard mode. Almost all new players in their fist year or two play standard. It takes some time to build a collection to play standard. Standard was created so new players didnt have to build a collection that included all sets from the beginning of hearthstone. It takes even longer to build a Wild collection. At the 6 month point, unless you have tons of money to spend on old sets you will likely get eaten alive in Wild. Try building a wild deck and play it some if you need to see what its like.

DK = DeathKnight, so yes, for Hunter the Death Knight is Deathstalker Rexxar

If this is a long term investment, most of the strong cards will rotate in April, who knows what will happen then.
