The term "token" refers to a creature being generated by another card in a paper card game such as Magic. Since you can't represent it with a card in your deck many people use a coin or small die that's referred to as a "token" . In Hearthstone, it's seen as a card generated by another card. For example, Token Druid is a deck with many cards that generate multiple minions or "tokens".
It's basically a non-collectible card (you don't find them in Hearthstone packs) and they are generated by other cards during a game. Tokens are generally minions in Hearthstone, but there are also token spells and weapons

This answer might not be covering the topic fully, but in my understanding a "token" is what is produced by a card, but isn't a card itself. In Hearthstone most often when we use the term "token" we refer to 1/1 and 2/2 minions with no text or abilities, that are spawned by actual cards.
For example, you could say that: Scarab Egg summons three 1/1 tokens upon getting destroyed. Notice that Scarab itself isn't a collectable card you can have in your collection and put in your deck, its only way of existing in the game is by being generated by actual cards.

Another possible definition of token cards are cards that fit into a “Token” style deck - small, low mana minions that often replace themselves on the board or in your hand when they die (Acornbearer, Mecharoo, Loot Hoarder, etc.) and that synergize with cards that buff your board (Power of the Wild, Savage Roar, Bloodlust, etc.)
